Everyone knows summertime is grilling season. But not everyone uses the grill to its full potential.

Sure, everyone grills hot dogs and hamburgers, and sometimes shish kabobs or fresh fish. But when it comes to messier meals – dishes loaded with creamy dressing and melted cheese – most folks just assume those are for indoor cooking.

Clearly, they do not know about the magic foil packet trick.

Foil packets are a clever way to cook just about anything on the grill. You slice up all your raw ingredients into thin pieces that cook quickly, then wrap them all up in a piece of foil with your favorite toppings. Then you just pop that whole packet on the grill and let it steam, flipping it over once, until it’s done.

Here’s a perfect example: Bacon Ranch Potatoes in foil packets. These are a twist on the classic loaded baked potato, except instead of cooking the whole potato on the grill – which would take a long time – you slice it up super thin and put it in a foil packet with onions, bacon, cheddar, and creamy ranch dressing. Season it, fold it up, and slide it on the grill, and in about half an hour, you’ve got perfectly tender potatoes oozing with cheesy goodness.

Try it, and you’ll fall in love with your grill all over again.

Bacon Ranch Potatoes Grill Foil Packet

Ingredients
2 lb potatoes
1/3 cup ranch dressing
5 slices bacon, cooked, crumbled
½ cup cheddar, shredded
2 Tablespoons parsley, chopped
¼ cups onion, thinly sliced
½ teaspoon garlic powder
as desired salt and pepper

Directions
1. Preheat grill to 350 or medium heat. Slice the potatoes into ¼ inch slices. After slicing, rinse in water quickly and pat dry.
2. Spray the foil with non-stick spray. In a bowl, combine the potatoes, onions, ¾ of the ranch dressing, garlic powder, salt and pepper.

3. Mix well and place potato mixture in the center of the foil.

4. Top the potatoes with bacon and cheddar, and seal in the foil. Grill the potatoes for 20-25 minutes, with lid closed. flipping once through the process, ¾ of the way through.

5. Remove from grill after cooking time is up and let sit for 5 minutes. Upon serving, spoon remaining ranch dressing on top of the potatoes, and garnish with parsley.

NOTE: You can cook these in the oven if you would like. To do so, preheat oven to 425 degrees and cook for 30 to 35 minutes.

  1. These tasted great but I don’t think the time is right on a grill. We cooked them for 30 minutes on a grill with the lid closed on medium heat. They probably needed another 20 minutes or more though at least!

    These potatoes were delicious, but 25 lminutes at 350 on the grill was too long. Maybe I sliced them too thin. I might try 250 next time. Will definitely make this recipe again.
