Greek Yogurt Chicken Salad just got a whole lot cooler!

If you love chicken salad and avocados, then you are going to go ga-ga for this recipe.  After my first bite , I had an OMG moment. How can this taste THIS GOOD and be HEALTHY!

To make this recipe even more awesome, I used 1/2 mayo and 1/2 plain Greek Yogurt.  This plus the creamy chunks of avocado really do take this recipe up a notch. Double bonus…. my daughters also loved it 🙂  So next time you are thinking about whipping up some chicken salad, please do yourself a favor and give this amazing recipe a try.

Healthy Avocado Chicken Salad

  2. Serve on your favorite bread, crackers, pita pocket or on a bed of lettuce.

Healthy Avocado Chicken Salad

Ingredients
 

  • 2 cups shredded chicken
  • 1 avocado
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp lime juice
  • 1 tsp fresh cilantro
  • 1/4 cup mayo
  • 1/4 cup plain Greek Yogurt

Instructions

  • Mix all ingredients in a large bowl. Cover and refrigerate for at least 20-30 minutes to let all those yummy flavors blend together.
  • Serve on your favorite bread, crackers, pita pocket or on a bed of lettuce.

Notes

Serve any Healthy Avocado Chicken Salad leftovers for lunch the next day!

  2. we tried this about a month ago and it has became our go to lunch choice! Its so refreshing and all the flavors are great together! We love it in pita pockets or lettuce wraps! Even my 4 year old asks for it on picnic days 🙂 Thanks for such a wonderful and quick recipe!

    Hey! Great recipe. I got a question tho. Can I take this to school. Cause its going to sit for 4 hours, and I wanna know if the chicken salad will stay fresh?

  5. I poached the chicken breasts with a bay leaf, celery, and carrots (strained and froze the broth for another day). Then made some cheddar, parmesan, and Monterey Jack baked cheese crisps to serve it with. So delish and low carb! Thanks for sharing the recipe.
