Healthy Avocado Chicken Salad

Greek Yogurt Chicken Salad just got a whole lot cooler!
If you love chicken salad and avocados, then you are going to go ga-ga for this recipe. After my first bite , I had an OMG moment. How can this taste THIS GOOD and be HEALTHY!
To make this recipe even more awesome, I used 1/2 mayo and 1/2 plain Greek Yogurt. This plus the creamy chunks of avocado really do take this recipe up a notch. Double bonus…. my daughters also loved it 🙂 So next time you are thinking about whipping up some chicken salad, please do yourself a favor and give this amazing recipe a try.

Healthy Avocado Chicken Salad
- Mix all ingredients in a large bowl. Cover and refrigerate for at least 20-30 minutes to let all those yummy flavors blend together.


- Serve on your favorite bread, crackers, pita pocket or on a bed of lettuce.

Ingredients
- 2 cups shredded chicken
- 1 avocado
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp lime juice
- 1 tsp fresh cilantro
- 1/4 cup mayo
- 1/4 cup plain Greek Yogurt

I loved it! I added two teaspoons of honey for a little sweetness. I used powdered garlic and onion salt because onions are kind of hard on my stomach. I put a stick of celery in the blender for texture. Very Good! 🙂
I had to use a plain guacamole since the avocados at pur store weren’t ripe. It was awesome! I REALLY enjoyed it.
