Holà, everyone! Today I’ll show you how to pack up one of your favorite Mexican meals – taco salad – in an EasyLunchBoxes container  (affiliate link) that you can take on the go.

Though actually, there’s not much to show you, because this could hardly be simpler. All you have to do is take all the ingredients that go into your taco salad and pack them into the handy little compartments in the box.

Tortilla chips go in a compartment by themselves, so they stay crisp. Salsa and sour cream get packed in little cups, so they don’t spread over everything and make a mess. And the lettuce, black beans, corn, and shredded cheese can get dumped into a big compartment together, with a pile of little cherry tomatoes on the side.

Then, at lunch time, you can crumble the chips over top of the salad and eat it all together with a fork, or dip them in the salsa and enjoy them on the side. Or, heck, dip the tomatoes in the sour cream and eat them separately. It’s your lunch, so eat it your way!

Here is what you need for these healthy school or work lunches. Measurements will vary. You can also add in some shredded chicken or leftover taco meat!

Prep Time 10 minutes

Ingredients
 

  • 4 cups Tortilla chips
  • 1 cup Salsa here is my famous blender salsa!
  • 1/2 cup Sour cream
  • 4 cups Lettuce
  • 1 cup Black beans
  • 1 cup Corn
  • 1 cup Shredded cheese
  • 2 cups Cherry tomatoes

Instructions

  • Place ingredients into your lunchbox container. Seal with a lid and place in refrigerator until ready to use. Use within 3 days.
