I have no idea who first invented the idea of grinding up meat and making it into balls. But whoever it was, they were really on to something. Meatballs are one of the most useful ideas ever dreamed up in the kitchen. They let you stretch your meat further by mixing it with bread crumbs, rice, or veggies. They’re a good way to use tough cuts of meat that aren’t good roasted. And because the balls are little, they cook up faster than a whole big slab of meat.
Once you’ve got the basic idea of turning meat into balls, you can come up with about a million different ways to do it. You can use ground turkey or chicken instead of beef. You can serve the balls on sticks as an appetizer or dish them up over rice or noodles for a main course. And, of course, you can cook them with pretty much any sauce under the sun – so no matter what your family’s tastes are, there’s a meatball recipe they’ll love.
