You got to know when to fold it!

Excuse me for a minute while I rave about this new kind of bread I just discovered. It’s called Flatout Foldits, and it may just be the coolest thing since sliced bread. No, wait…it’s actually even cooler than sliced bread, which is kind of the point.

Tarragon Chicken Salad
(printable recipe at bottom of post)
INGREDIENTS: 2 cups shredded or diced chicken
3/4 cup finely chopped celery
1/2 cup Tablespoons mayo
1/8 cup finely chopped red onion
2 Tablespoons chopped fresh tarragon
1 Tablespoons fresh lemon juice
1/4 cup sliced almonds
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
DIRECTIONS: In large bowl, combine all ingredients and mix until well combined. Cover and refrigerate for at least an hour.
Serve on your favorite Flatout Foldit! Perfect for lunch at home or on the go!

We have roast chicken frequently, which means lots of leftover chicken. A favorite way of using it is chicken salad with celery, apples, and walnuts, bound with sour cream, and usually flavored with thyme or tarragon. It would be great on a Flatout!
