Lucky Leprechaun Cocktail
So, since I’ve already done a fun St. Patrick’s Day activity for the kids, I thought maybe we should have one for the grownups, too. And we all know what activity grownups like for St. Patrick’s Day…drinking!
Now, of course, a drink for St. Patrick’s Day has to be green, to go with all the decorations. But just putting green food coloring in a glass of beer is so boring. It’s much more fun to start with something that’s nice and bright green already, like lime Kool-Aid (or whatever other brand you like), and then add the booze.
So what kind of liquor goes with lime? Well, lots of gin cocktails have lime in them, from the classic gin and tonic to the gimlet. So we’ll definitely want some gin in there.

But just gin and lime is going to be pretty strong, and we don’t want to get into the holiday spirit too quickly. So let’s add in some more flavors to make it more of a punch. Some pineapple juice for a tropical touch, and then some clear soda, like 7-Up or Sprite, to give it a bit of fizz.
So now we’ve got something sweet, tangy, bubbly, and BRIGHT GREEN, with a naughty little kick to it. What can you call something like that but a Lucky Leprechaun Cocktail? Try it, and I’m pretty sure you’ll feel lucky in no time.
Oh, and if the kids really want to try the green drink too, you can make an alcohol-free version with no gin and more soda. But the regular version is just for Mommy and Daddy.
Lucky Leprechaun Cocktail

INGEDIENTS:
1 cup sugar
1 package Unsweetened Lime Flavored drink mix
1 24 oz can of pineapple Juice
1 liter of Sprint or 7up
1.5 cups Gin (optional)
DIRECTIONS:
1. Mix together Pineapple juice and sugar. Stir in Lime mix, dd in soda. Stir in gin for the boozy version and enjoy!
