Tik Tok Famous Breakfast Quesadillas
There are two activities everyone has been doing a lot of lately: cooking and watching TikTok videos. So, naturally, TikTok videos about cooking are just the hottest trend ever. PS.. Did you know I’m on Tik Tok now?!!! Make sure to follow me there.
I actually had a lot of fun with the whipped coffee recipe from TikTok, so when I learned about a TikTok hack for making taco quesadillas, I knew I had to give it this breakfast variation a go. Of course, I’ve made quesadillas tons of times before – lots of different quesadillas, in fact. But this one is special, because it’s folded.
Here’s how it works: you make a slit in the tortilla from the top down to the center. Then you fill each quadrant of the circle with a different breakfast goodie – eggs, bacon, and two kinds of cheese. And then, section by section, you fold it up into one compact little package with all four ingredients stacked together, and pop it on the griddle. This gives you a nifty layered quesadilla, with sheets of tortilla separating the ingredients. Instead of mixing together, the flavors hit your tongue one after another, boom, boom, boom…like a book with new chapters unfolding. (See what I did there?) Still confused? Tik Tok Famous Breakfast Quesadillas
- Place a flour tortilla flat on the workspace. Use a sharp knife or kitchen shears to cut a single line from the center to the edge of the tortilla. Rotate the tortilla, if needed, so that the cut line is pointed straight down.
- Imagine the tortilla divided into four quadrants – the first quadrant being the one directly to the left of the cut, and then moving clockwise to quadrant 2, 3, and 4.
- In quadrant 1, place 2 pieces of bacon, breaking them into pieces if needed to fit in the triangular area of the quadrant.
- In quadrant 2, place 1/4 of the scrambled eggs (estimate about 1 egg per quesadilla if adjusting the number of servings).
- In quadrant 3, sprinkle 1⁄4-1⁄2 cup of one of the cheeses.
- In the final quadrant (to the right of the slice line), sprinkle 1⁄4-1⁄2 cup of the other cheese.
- To fold up the quesadilla, flip quadrant 1 up on to quadrant 2. We put the bacon in the first quadrant because it is easiest to keep it tucked in when folding up that section.
- Continue folding the quesadilla in a clockwise direction until it is folded into a compact triangle.
- In a medium saucepan, melt a dab of the butter over medium heat. Use a spatula to scoop under the folded quesadilla and lift it gently into the pan, being careful not to let the cheese spill out. (One layer of cheese will be on the bottom of the folded quesadilla and the other layer of cheese will be on top.
- Cook the quesadilla over medium or medium-low heat until the quesadilla is browned and the cheese on that side is melted.
- Carefully, flip the quesadilla (either add a bit more butter to the pan or spread a bit of butter on to the side that is face up before you flip it over). Continue cooking until the quesadilla is browned on both sides.
- Repeat these steps to cook the remaining quesadillas.
Recipe Tips:
- If you have a large saute pan, you can certainly cook more than one quesadilla at a time. Prepare them all at once and cook however many at a time that will fit in the pan.
- Monitor the heat in the pan so that the tortilla does not burn before the cheese melts. It is important to have the cheese in that third and fourth quadrant so that the cheeses are on the “outer” layers and melt during cooking. Flip the quesadilla carefully so that the cheese doesn’t fly out of the quesadilla before it is melted.
- Adjust servings by approximating 1 egg per quesadilla and about 2 slices of bacon. Season the egg with a little salt and pepper while scrambling if desired.
- The butter is my favorite trick for making a delicious pan-fried quesadilla. You can always brown them in a little oil if you don’t have/want to use butter.
- You could throw some avocado in this one too. Or add some tabasco or salsa before folding the tortilla up.
