Turkey Club Skewer Lunchbox Idea

A turkey club sandwich is like a regular turkey sandwich turned up to 11. It’s got layers of turkey, bacon, lettuce, tomato, and cheese, served up on toasted bread with mayo. Some club sandwiches are so massive, you can barely fit your mouth around them.

Naturally, it’s not that easy to fit something that size into a lunchbox. But I figured out a way.

I simply shrunk down my full-size turkey club to create miniature Turkey Club Skewers. Each skewer is loaded with little morsels of sliced turkey, bacon, lettuce, cheese, and tomato, all tucked between little squares of bread. And instead of smearing the bread with mayonnaise (which would just make it soggy by lunchtime) I added little chunks of avocado. That adds the creamy texture of mayo with an extra dose of vitamins and healthy fats – not to mention flavor.

After loading the main compartment of my lunchbox with these little skewers, I filled up one of the two side compartments with potato chips, the classic accompaniment to a club sandwich. Then I filled the other one with grapes to give the meal a sweet finish in a healthy way.

Turkey Club Skewer Lunchbox Idea

  1. Cook bacon till it is slightly crispy, so that it will go onto the skewer without breaking.
  2. Skewer the bread, turkey, avocado, lettuce, cheese, bacon and tomato till full. 
  3. Divide ingredients between your 4 lunchboxes.

Ingredients
 

  • ½ pound Deli Turkey slices
  • Bacon
  • 2 pieces of toasted bread of choice
  • 4 slices of cheese
  • 1/2 cup Lettuce
  • 1 cup Cherry Tomatos
  • 1 Avocado
  • 4 inch Skewers
  • 4 cups Potato Chips
  • 2 cups Grapes

Instructions

  • Cook bacon till it is slightly crispy, so that it will go onto the skewer without breaking.
  • Skewer the bread, turkey, avocado, lettuce, cheese, bacon and tomato till full.
  • Divide ingredients between your 4 lunchboxes.

    Love this!!! However, in today’s school world, I’m trying to think of something other than toothpicks for skewers… perhaps (Spears) of celery. Anyway, love the idea!!!
