Like all sheet pan recipes, this puts the entire meal—protein, starch, and veggies—on one pan. That simplifies the meal prep, serving, and cleanup all at once.

The centerpiece of the meal is beef smoked sausage, accompanied by baby potatoes, baby carrots, shallots, and green bell pepper. Toss all that together with some heart-healthy avocado oil and—this is the kicker—a packet of garlic parmesan wing seasoning mix. That gives every part of the meal a savory flavor punch.

Then spread everything on a sheet pan and roast until the veggies are perfectly tender. And boom, dinner is served!

Recipe Notes:

The beauty of a recipe such as this one is that it can easily be modified to fit the needs or tastes of anyone or even just to add variety to your meals. Here are some suggestions on how you can modify it for your family:

  1. Use the family’s favorite vegetables! My kids won’t touch a green bell pepper from a mile away but they love red bell pepper. You could easily switch out the green bell pepper for a red, yellow or orange one or if bell peppers aren’t liked at all you can add in some corn, mushrooms, asparagus or whatever other vegetable you are wanting to serve in this yummy meal.
  2. Go vegetarian! If you don’t have any sausage on hand or are trying to cut back on meat, you can easily replace the sausage with extra vegetables of any kind!
  3. Increase the meat! My kids decided that their favorite part of this meal was the sausage. They picked it out and left the vegetables of course. It left me thinking that next time I will double the meat so that I am sure to get some too!
  4. Serve it loaded! After the pan comes out of the oven, sprinkle on some shredded cheese and green onions and serve it topped with sour cream and guacamole like a delicious loaded potato meal.
  5. Change up the seasonings! Feel free to replace the garlic parmesan seasoning with your favorite seasonings (you will need about ¼ cup) or another mix. Most grocery stores carry pre-made seasoning mixes for everything from lemon and pepper to cajun marinade. Experiment around and see what seasonings are your favorite with this versatile meal!
How do I store these sheet pan sausage and potatoes?

Once cooked, any leftovers should be stored in an airtight container in the refrigerator and will keep for up to 5 days. They can be reheated in the microwave or in the oven at 425 degrees fahrenheit until heated through. Though the microwave is faster, the oven method will ensure a better reheated texture. Leftovers can also be frozen for up to 3 months, thawed in the refrigerator overnight and reheated as mentioned above.
