Slow Cooker Summer Fruit Compote
I love to keep my kitchen cool during the summer by using my many crockpots. Most people use their slow cookers for dinner recipes, but why not put your crockpot to work on some freshSlow Cooker Summer Fruit Compote.
This dessert tastes just like summer. Serve with your favorite vanilla ice cream, and you have a dessert your family will be begging for more of.
Slow Cooker Summer Fruit Compote
- 3 cups fresh pineapple chunks
- 2 medium pears, cut into 1/2-inch pieces
- 2 cups frozen sliced peaches
- 1 cup frozen pitted cherries
- 1 cup frozen orange juice concentrate, thawed
- 2 tablespoon packed dark-brown sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- Combine pineapple, pears, peaches, cherries, orange juice, brown sugar and vanilla in a 4 qt slow cooker. Cover and cook on HIGH for 3-1/2 hours or LOW for 5-1/2 hours.
- Uncover and remove 4 tablespoons liquid. In a small mixing bowl, stir together liquid and 2 tablespoons of cornstarch. Stir cornstarch mixture back into slow cooker; cook 15-20 minutes more or until thickened.
- Serve warm with your favorite vanilla ice cream.

What a great way to use up some of that summer fruit and create a tasty ice cream topping!
This is a wonderful fruit compote and the recipe as is makes 1 quart plus 1 pint of the compote. It’s a bit much so I would like to freeze some of it. Is this possible?

I have just made fruit compote with strawberries,rhubarb,blackcurrants and raspberries,but its still too tangy,put in few tablespoons of sugar,but is there anything else I need to put in t take this tangy taste away.
