Carrot Cake Easter Trifle Recipe - Family Fresh Meals

Isn’t “trifle” a great name for a dessert? It means something that’s light and frivolous, something you don’t have to take seriously. Which is just how desserts should be.

A typical trifle has layers of cubed sponge cake, custard, and fruit. But you know how I love to put a twist on traditional recipes…so I’ve given this one an Easter twist by making it with carrot cake. Because, of course, that’s the Easter bunny’s favorite.

Instead of adding fresh fruit to this trifle, I’ve used raisins, which are a natural with carrot cake. Instead of layering them over the cake, you can bake them right in…along with some extra shredded carrot to make the cake even more moist and delicious.

Then, in place of the traditional custard, I’ve used something closer to the cream cheese icing that goes so naturally with carrot cake. You just beat the cream cheese together with sugar, butter, and whipped topping to make it extra fluffy and creamy.

Layer the cubes of cake in a bowl with layers of the creamy cheese topping, and just for fun, sprinkle some chocolate Easter egg candies on top. Because if you’re making something called a trifle, ya gotta have fun with it.

Carrot Cake Easter Trifle

INGREDIENTS:

1 box of Carrot Cake Mix & required ingredients
1 Carrot, shredded
1/3 cup raisins
8oz of softened cream cheese
1.5 sticks of softened butter
3 cups of powdered sugar
1 tbsp vanilla
16 oz Cool Whip
Easter Egg Chocolate candies.

DIRECTIONS:

1. Prepare the carrot cake recipe as instructed (adding in shredded carrots and raisins). Allow to cool when finished then cut into cubes.

2 For the whipped mixture: Using an electric mixer on medium/high speed cream together the softened cream cheese and butter until light and fluffy, about 3-4 minutes.

3. Next, slowly add in powdered sugar 1/2 cup at a time until. Pour in vanilla and mix for an additional 2 minutes until mixture becomes fluffy again. Fold in cool whip by hand.

7. Add Easter candies on top and refrigerate until it’s time to serve.
