One Pan Smothered Beef Burrito Skillet Recipe - Family Fresh Meals

Are you ready for another family favorite? Here’s a new recipe for One Pan Smothered Beef Burrito Skillet. At least, I call them burritos, but they’re really like a cross between burritos and enchiladas. So they’re, what, burri-chiladas? Enchila-ritos? Whatever, it’s all good.

These start out like your basic beef burrito. You brown the ground beef with garlic and onions, and spice it up with some taco seasoning. Then you roll it up in a flour tortilla with refried beans, rice, and cheese.

So far, it’s all pretty simple, right? But now comes the twist: you load those burritos, seam side down, into a skillet, and bake them. So all the flavors – beef, beans, spices – start soaking and spreading through into the rice and the tortillas. And then, about ten minutes from the end, you pull out the pan and smother it in red enchilada sauce and cheese.

By the time the pan comes back out of the oven, what started out as plain burritos will be tender and flavorful, soaked with the spicy enchilada sauce and oozing with hot, melted cheese. Dress them up with a little chopped cilantro and lime, and you’ve got all your favorite Mexican flavors in one dish.

One Pan Smothered Beef Burrito Skillet

Ingredients:
1 tablespoon vegetable oil
1 lb lean ground beef
1/3 cup diced onion
2 garlic cloves, minced
1 package (1 oz) taco seasoning mix (or 2 TB of my DIY Taco Seasoning)
1/3 cup water
5-6, 8in flour tortillas
1 cup refried beans
1 1/2 cups cooked rice
2 cups shredded Mexican cheese blend, divided. (or more if you like it extra cheesy!)
1 can (10 oz) red enchilada sauce

Optional Toppings:
Chopped fresh cilantro leaves, sour cream, and salsa

Directions:
1 Heat oven to 350°F. In 12-inch oven-safe skillet, heat oil over medium-high heat. Cook beef, garlic and onions until browned. Drain off accesses grease, and return beef mixture to skillet.
2. Stir in taco seasoning mix and water. Mix until well combined. Cook over medium heat until mixture thickens. Remove from heat and set aside.

3. Clean out skillet and spray with cooking spray. Divide refried beans, rice and beef mixture among the centers of tortillas.  Evenly top with cheese, (about 2 Tablespoons each.)

4. Roll up into burritos, and place seam side down in skillet. Bake 15 minutes.

5. Remove from oven and drizzle with enchilada sauce over the burritos.

6. Sprinkle with remaining 1 cup cheese. Bake 8 to 10 minutes longer or until cheese is melted. Serve with optional toppings.

    Excellent! I followed the recipe except for I used Spanish Rice instead of white rice. This is a keeper! I must say I was a little worried because my husband is not a rice person or a red sauce person when it comes to his burritos – but he loved these. Thank you for the recipe. I also commented on Pinterest about them.

    1. If you leave out the rice, I would maybe add in more beef mixture or beans to bulk up the burrito. You can sub in red sauce as well 🙂
