Well, the holidays are over. Now all that’s left is the post-holiday guilt.

Let’s be honest, the holidays tend to be one long round of self-indulgence. We kick it off by stuffing ourselves with turkey and pie on Thanksgiving, spend all of December munching on cookies and sipping eggnog, and top it all off with perhaps just one too many glasses of champagne on New Year’s Eve. This Crockpot Detox Soup is the perfect antidote. It’s got tons of veggies in a bright array of colors – carrots, onions, green beans, red kidney beans, tomatoes, cabbage, spinach, and celery – to pump your system full of all those vitamins it’s been missing out on. A couple of chicken breasts add some nice, lean protein with no extra fat to weigh you down.

This has everything your body needs without any of the junk you’ve been feeding it all through December. All it needs is a good whole-grain bread to make a complete, healthy meal.

Serve this for dinner a few times in January, and your body should be back on track for a healthy 2019.

Crockpot Detox Soup Recipe - Ingredients kidney beans, green beans, carrots, onions, cabbage, celery and seasonings

Crockpot Detox Soup

Ingredients
1 medium onion, diced
3 large carrots peeled and sliced into rounds
3 cups frozen green beans
4 cups of chopped cabbage ( about 1/2 a large head) head of cabbage cored and chopped
1 cup diced celery
16 ounce can red kidney beans, drained
1 lb boneless, skinless chicken breasts
1.5 teaspoon salt
1/2 teaspoon pepper
2-3 teaspoons minced garlic
1 TB dried parsley
2 bay leaves
1 (28oz) can crushed tomatoes
4 cups beef broth
2 cups water
2 cups, loosely packed fresh baby spinach.

Directions:

3. Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours, or until vegetables are tender, and chicken is throughly cooked. Ingredients
 

  • 1 medium onion diced

  • 3 cups frozen green beans
  • 4 cups of chopped cabbage about 1/2 a large head head of cabbage cored and chopped
  • 1 cup diced celery
  • 16 ounce can red kidney beans drained
  • 1 lb boneless skinless chicken breasts
  • 1.5 teaspoon salt
  • 1/2 teaspoon pepper
  • 2-3 teaspoons minced garlic
  • 1 TB dried parsley
  • 2 bay leaves
  • 1 28oz can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 cups loosely packed fresh baby spinach.

Instructions

    Detox or not, this soup sounds incredible! We LOVE veggies, so this is right up our alley. BTW, how large is one ‘serving’ (hope it’s HUGE!)

  4. What is the serving size – there is no indication in relation to the nutrition facts.

    Instead of the raw chicken breasts could you just add rotisserie chicken? How much?

    1. 4 breasts is about a pound, so probably the whole rotisserie chicken, including dark meat for an equivalent amount of meat.

    I made this recipe last night, and oh my, it is absolutely delicious! It’s exactly what I needed to start the New Year out eating healthy. I love crockpot soup so much, and I have to say this is by far my favorite. It turned out so great! The cabbage is perfect, my broth is dreamy and light, and packed full of veggies! I did add a half a cup of corn as well (I love corn). I’m super proud of the outcome. My hobby is cooking and trying new things, so thank you so much! It was wonderful. I will be following a lot of your other recipes in the future. Happy New Year!
