Greek Marinated Chicken

Chicken breast is an incredibly convenient ingredient. It’s lean, healthy, and fast-cooking, and it works in all sorts of recipes. But on its own, it can be a little, well, dull. It makes a quick and healthy dinner, but not one that anyone will get very excited about.Greek Marinated Chicken on a plate

Unless, of course, you marinate it first. A good marinade infuses your chicken with flavor that comes through in every bite. And the secret to a good marinade is…yogurt.

I know it sounds weird, but yogurt turns out to be a great meat tenderizer. Letting the chicken bathe in it for a good hour makes it so tender and juicy it practically melts in your mouth. And when you pop it on the grill, the dairy in the yogurt caramelizes super fast, giving it a beautifully browned surface that’s crisp outside, soft underneath. It’s like nothing else you’ve ever tried.Greek Marinated Chicken on a plate

Want to see for yourself? Then give this Greek Marinated Chicken a try. Along with the yogurt, it has the zesty Mediterranean flavors of lemon, garlic, oregano, cumin, basil, and smoked paprika. An hour in this marinade, a quick six minutes on the grill, and you’ll discover just how flavorful this plain and simple meat can be.

  1. Add all your ingredients besides the chicken to a medium mixing bowl stir until well combined. Add the chicken in the yogurt mixture and make sure it is covered well.ingredients for marinade in a bowl and a plate of chicken breast
  2. Cover the chicken, place it in the fridge, and allow it to marinate for 1-3 hours.covering chicken in marinade
  3. My favorite way is to grill this chicken. Heat your grill to medium heat, grill your chicken for about 6 minutes per side until the chicken reaches an internal temperature of 165°F. Keep an eye on the chicken as it cooks because the yogurt will burn if it’s cooked too high of a heat.

  4. This recipe is also great in the oven or cooked on the stovetop. You can cook this in a preheated 375 degree F oven for 20-25 minutes or until the internal temperature reaches 165 degrees F. Let chicken sit for 5 minutes to rest. chicken on grillGreek Marinated Chicken on a plate

Can this be made with other cuts of chicken?

  • Yes, you can use whatever cut of chicken you like.

Do I use skin-on or off chicken?

  • That is a personal preference. I like to use skinless chicken so I can use it on my Greek salad.

Can this be marinated overnight?

  • Yes, you can. I like to keep the marinated time to up to three hours not to tenderize the chicken too much.
