Always Soft and Chewy Rice Crispy Treats

Have you ever had a crispy treat that was dry and crunchy? It’s the worst, right?!

Growing up, my mom made these treats all they time…and guess what? They were ALWAYS soft and chewy rice cripsy treats. Her secret? BUTTER. The extra butter in these bars will leave you with the always coveted chewy treat. For holidays, have fun cutting these treats into different shapes and or add colorful food sprinkles for the occasion. Because these treats stay soft, it is a cinch to cut them out with cookie cutters.

QUICK TIP: If you don’t have Rice Krispy cereal on hand, any rice cereal works great!

Always Soft and Chewy Rice Crispy Treats

  • 8 tablespoons butter (cut into 1 TBSP tabs)
  • 1 package (10 oz) marshmallows
  • 1/4 tsp vanilla
  • 6 cups rice Krispies cereal
  • Optional: 2-3 Tablespoons colorful sprinkles 
  1. Place marshmallows, butter and vanilla  in a large microwave safe bowl. Microwave on HIGH for 1 minute at a time, stirring in between minutes, until mixture is melted and smooth.marshmallows and tabs of butter in in a mixing bowl

  3. (Note: this is also the time to add in colorful sprinkles if you are doing so.)Colorful sprinkles being mixing into bowl
  4. Prepare a 13 x 9 baking dish with parchment paper, and spread mixture. Because these are uber soft and chewy treats, you need to let them cool for at least 45-60 minutes.Rice krispy treats pushed into a parchment paper lined pan

  2. I want to try these for Valentine’s Day. Can I add strawberry jello powder for a strawberry flavor? If possible, how much would you recommend and when would you add it?

    1. I have never tried adding jello powder! What a yummy idea. I would use the 1.5oz small box, and add most of it to the melted marshmallows. I hope that helps! Let us know how they turn out 🙂

    Butter. What kind of butter? Salted, not salted? Real butter, I can’t believe it’s not butter, what butter?

    1. I like to use salted butter, but many people like to use unsalted. Haven’t tried this recipe with I Can’t Believe It’s Not Butter, but it might work. This recipe is pretty versatile as far as butter and add -ins such as sprinkles. 🙂

    Made these today with my kids. This was my second attempt at these delicious treats. I’m SO glad I came across this recipe because it’s perfect! The softness and chewy texture was great! Will definitely be using this recipe again! I read one of the comment questions regarding whether to use salted vs. unsalted butter. I never have salted butter at home, but picked some up for this recipe. I’m assuming the salted butter may dampen the sweetness a touch? So delicious. Thank you for this recipe!

  5. True to its claim. Best recipe for soft and chewy treats that last! Once cooled, I cut and wrap individual portions in plastic wrap, then place them in an airtight container. Keeps them fresh longer and you can grab one without compromising the other treats. 😉
