Buffalo Chicken Bombs
Man, I just can’t keep my hands off of Buffalo chicken. I keep coming up with more and more ways to serve it: as a sandwich, a wrap, a burger, a sloppy joe, a pasta, and even a salad. All these versions have the spicy kick of Buffalo wings, without all the litter of bones and greasy napkins.
For my latest twist on this great chicken dish, I’ve created Buffalo Chicken Bombs. I started with spicy shredded chicken, blended it with cheese, and then wrapped the mixture up completely in biscuit dough and baked it. This makes a neat little package that looks like an innocent, golden-brown dinner roll – but with a big payload of spicy, cheesy chicken sealed inside, just waiting to explode into your mouth.
These little babies are good for just about any occasion. They make a great party appetizer that’s easy to eat with one hand, but you can also toss them into a brown-bag lunch, enjoy one as an after-school snack, or even serve up a batch for a fun family dinner. Pretty much any time you have leftover roast chicken is the perfect time to make them.

- Baking Sheet: These are easy clean up and are ideal for baking, roasting, toasting, and warming.
- Basting Brush: These brushes work great for brushing on the honey mustard.
How to make Buffalo Chicken Bombs
INGREDIENTS YOU WILL NEED:
- cooked, shredded chicken
- cream cheese, softened
- hot sauce
- shredded cheddar cheese
- can biscuits
- Butter
- Parsley for sprinkling
- optional ranch dressing to drizzle
- Preheat oven to 350 degrees F. Spray a cooking sheet with non-stick cooking spray, set aside.
- In bowl mix together your chicken, cream cheese, hot sauce and cheddar cheese until combined, set aside.
- Flatten each biscuit until about 4-5″ inches wide and using a cookie scoop, scoop chicken mixture into middle of each biscuit. Pull sides together and seal tightly.
- Place seem side down on cooking sheet and brush with some melted butter. Bake in oven for 20-25 minutes until golden.
- Brush with more butter and sprinkle with parsley if desired.

- 1 8 count can biscuits

Yes! I would use it within 3 days in the refrigerator.
