Easy, fun and bite-sized!
I was looking back through some old Rachael Ray magazines and saw these Pizza Puffs. Yum! I knew I had seen a recipe like this one before and really wanted to try it.
I then remembered that Melissa’s Cuisine (love her recipes…make sure to check her site out!) had won Recipe of the Week with a similar recipe. Her Pizza Bites got a TON of votes.
Melissa’s recipe had a handful of ingredients that I didn’t have on hand, and I really like the idea of using fresh basil, so I decided to play around with the RR version.
Cheesy Pepperoni Bites
- Preheat oven to 375 degrees. Grease a 24-cup mini muffin pan. In a large bowl, mix together the flour and baking powder, whisk in the milk and egg.
- Next stir in the mozzarella.
- Finally, stir in the pepperoni and mix well. And let stand for 7-10 minutes.
- NOTE* For the vegetarian version, I removed 1/2 of the batter before adding the pepperoni, to make 12 no-meat bites 🙂
- Divide batter among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
- While waiting for the bites to bake, microwave the pizza sauce until warmed through. Stir in 1 Tablespoon of your fresh basil.
- Sprinkle the puffs with the remaining 1 Tablespoon basil. Serve the puffs with the pizza sauce for dipping.

- 4 ounces turkey pepperoni chopped
- 1/2 cup pizza sauce
