Cinco De Mayo Appetizer Board
Holà, everyone! It’s time for the hottest fiesta of the year, Cinco de Mayo! And even if I can’t have a big party this year, I’m still determined to celebrate in style.
My Cinco De Mayo Appetizer Board features tortilla chips with three of my favorite Mexican dips (because you know I love a good dip!). There’s my delicious blender salsa on the left side of the board, my Cowboy Caviar at the top, and my warm, creamy Crockpot White Queso Dip at the bottom. You can make the two cold dips ahead of time – just wait until the last minute to add the chopped avocado to the Cowboy Caviar.
Then, for the main course, fajitas! These are the best Mexican meal for a family with both vegetarians and meat-eaters, because each person can add whichever ingredients they want to their own tortilla. I just learned to do chicken fajitas in the air fryer (recipe coming soon) and they are so fast and easy this way! Serve the warmed-up tortillas on the side, along with shredded cheese, lettuce, and your dips.
Then all you need is a good margarita – or perhaps one of my skinny margaritas – to get the fiesta started.
