Crockpot Cheesy Chicken & Rice
The girls loved it and asked for it again the next day. To add a twist to the leftovers, I sauted some baby spinach and then mixed in a serving of the Cheesy Chicken and Rice.
It added some green (which I love) and another dimension to the flavors. Hope you enjoy this easy family favorite!

I’ve been making this for years and only just noticed the comment section so I was reading through. And did I read that right, you’re suppose to use a whole box of rice ?! If so I’ve been making this wrong this whole time 😅🙃
This is so delicious!
However, my crockpot is brand new and I’m glad I kept checking because I had it on low, expecting to serve at 8 and it actually was ready at 5:30! (3&1/2 hours)
I’m glad I didn’t leave it because the chicken would be SO overdone!
Otherwise, wonderful, yummy recipe
So easy and so yummy! Everyone loved it!
Family favorite: adding the rice in the last 20 minutes, instead of cooking it separately, helps it turn out a little thicker. One of my favorite crock pot recipes and my go-to when asked for an easy weeknight dinner idea.
Always made this simple crockpot meal for my kids growing up. Now that the kids are out of the house, they continue to ask for this favorite meal when they come to visit. Thank you for sharing this recipe with us. What a comfort food! I don’t use corn in this recipe as we use green beans as a side instead.
