Crockpot Cheesy Cowboy Potatoes Recipe - Family Fresh Meals Recipe

Well, howdy, folks! I’ve just been fixing myself up some cowboy-style grub.

Out on the range, cowboys had to cook their supper over an open fire, so they relied on one-pot meals. One recipe that’s come down from that time is cowboy potatoes, which basically means a pot of potatoes with stuff cooked in it.

This is a dish that no two people make alike. It usually has potatoes and onions in some sort of cheesy sauce, but some people add other veggies, some add meat, and some leave out the cheese. You can make it with beef, sausage, or beans, and the potatoes can be mashed or just diced. As long as you’ve got potatoes cooked in a pot with something, it’s cowboy potatoes.

My version of cowboy potatoes is a hearty mixture of seasoned ground beef, taters, cheese, and onion. And instead of cooking it over an open fire, I do it the easy way, in my Crockpot. So it has just two steps: brown the beef and onion together, then layer that in a pot with the potatoes, seasoning, cheese, and some butter to soak in the flavor.

Then just set on your cooker on low for four or five hours, and bang on the triangle when it’s chow time.

Crockpot Cheesy Cowboy Potatoes

INGREDIENTS
1 lb. lean ground beef (seasoned with salt and pepper)
2 Tablespoons A1 Sauce
1 small yellow onion, diced
3 lbs peeled russet potatoes, sliced a ¼ inch thick
3 Tablespoons of butter, cut into 12 thin tabs
1 tsp. paprika
1 tsp. garlic powder
1 Tablespoon parsley
1 tsp salt
¼ tsp. pepper
2 cups shredded sharp cheese
1 cup munster cheese, shredded
1/2 cup cook, diced bacon
½ cup beef broth

Fresh parsley diced, and diced bacon for topping

Directions:
1. Brown and season the ground beef on the stove top with diced onion. drain fat. Stir in 2 Tablespoons of A1 Sauce and set aside.

2. In a small bowl combine the paprika, garlic powder, parsley, salt and pepper.
3. Combine the cheeses together in a small bowl.

4. Add half of the potatoes in the crockpot. Sprinkle with half of the seasonings, 4 tabs of butter, half of the meat/onion mixture, half the bacon and half of the cheese. Repeat the layers again. Drizzle broth evenly over the layers, and top with last 4 tabs of butter.

5. Cover and cook on high for 4-5 hours, or until potatoes are throughly cooked.
