Crockpot Sausage Tortellini Stew (with vegetarian version)
For those of you who have been following Family Fresh Meals since the beginning, this stew might look a little familiar to you. I decided to give this recipe a much needed make-over. Same amazing recipe, but prettier pictures 🙂The stew has been a family favorite since the first time I made it.  Crockpot Sausage Tortellini Stew
- In a large skillet, heat oil over medium heat. Add sausage, onion and garlic. Saute until meat is browned & no longer pink. Â Put sausage, tomatoes, green beans, chopped onion, Italian seasoning, basil, oregano, and minced garlic into crockpot.
- Stir and cover. Â Cook on HIGH for 4-5 hours, Â or LOW for 7-8 hours.

- When there is 20 minutes remaining, stir in tortellini and add 1 cup of water. Continue cooking, and serve when done!

Ingredients
- -1 lb of Italian or turkey sausages or MorningStar Grillers Crumbles for vegetarian version
- -28 oz canned tomatoes
- -9oz frozen green beans
- -1 large onion chopped
- -1/2 tsp Italian seasoning
- -9oz refrigerated cheese tortellini
- -1 tbsp oregano
- -1 tbsp basil
- -3 cloves minced garlic
- -tbsp olive oil

I’m planning to try this with Field Roast Vegetarian Italian Sausage. We’ve had great luck using that as an Italian Sausage substitute for other recipes. Thanks for the great recipe!
