Crockpot Sausage Tortellini Stew
- In a large skillet, heat oil over medium heat. Add sausage, onion and garlic. Saute until meat is browned & no longer pink. Put sausage, tomatoes, green beans, chopped onion, Italian seasoning, basil, oregano, and minced garlic into crockpot.
- Stir and cover. Cook on HIGH for 4-5 hours, or LOW for 7-8 hours.
- When there is 20 minutes remaining, stir in tortellini and add 1 cup of water. Continue cooking, and serve when done!

Crockpot Sausage Tortellini Stew
Ingredients
- -1 lb of Italian or turkey sausages or MorningStar Grillers Crumbles for vegetarian version
- -28 oz canned tomatoes
- -9oz frozen green beans
- -1 large onion chopped
- -1/2 tsp Italian seasoning
- -9oz refrigerated cheese tortellini
- -1 tbsp oregano
- -1 tbsp basil
- -3 cloves minced garlic
- -tbsp olive oil
Instructions
- In a large skillet, heat oil over medium heat. Add sausage, onion and garlic. Saute until meat in browned & no longer pink.

Sound delicious and I love slow cooker recipes. I only have frozen tortellini…do you think I should thaw and add it 20 minutes before it’s done or throw it in frozen at the beginning? I’ve seen some other recipes that use frozen and cook it for 5 hours…hmmm….thanks for the great recipe idea!
