A dip that really pops.
I really love Jalapeno poppers. Those spicy, cheesy, crunchy little bites of flavor are seriously yummy.
Unfortunately, they’re also a big hassle to make. You have to hollow out the peppers one by one, stuff them with cheese, then bread them and deep-fry them. And since deep-fried anything isn’t exactly health food anyway, I end up only having these as a special treat when we go out to eat.
I realized if I wanted to get that spicy-cheesy flavor in a dish I could make at home, I had to find a way to make it simpler. So I did what I always do with a recipe that’s too much work – just turn it into a dip!
My Jalapeno Popper Dip is much easier to make than frying up a bunch of whole peppers, and it’s better for you, too. Instead of stuffing the cheese filling into the jalapenos, you chop up the peppers and mix them into the cheese. Then, to get that gooey, melting texture, you bake the mixture in a casserole dish, topped with buttered bread crumbs. And to supply the crunch of that fried outer skin, you serve it up with crunchy French-bread toast, crackers, chips or veggies!
And presto…jalapeno poppers, the easy way.
Easy Jalapeno Popper Dip
- Prep your ingredients and preheat the oven to 425° F
- Remove the seeds and ribs from the jalapeno peppers and dice them to your size choice.
- In a small bowl, combine the softened cream cheese and sour cream. Mix until smooth.
- Stir in the cheddar cheese, paprika, salt, pepper and diced jalapenos.
- Spoon the cream cheese mixture into a small skillet or casserole dish. Melt the butter in a microwave safe dish, stir in the bread crumbs. Top the dip with the bread crumbs
- Bake for about 15 minutes or until bubbly! If you are severing with bread, slice the french bread and toast on 425 for 5 minutes. The crunchy bread is a yummy vessel for this dip and takes the place of the crunchy fried outer of a jalapeno popper.
