Easy Salmon Foil Packets

According to Time magazine, one of the most common New Year’s resolutions is to eat healthier. Unfortunately, it’s also one of the quickest resolutions to be broken.
The authors think it’s because people go overboard. So many of us think that eating healthy means giving up their favorite treats for good, and who could stick to that? But I think there’s another reason too. A lot of people think cooking healthy meals is hard work. You know, skinning the chicken, mixing up low-fat dressings, weighing out your portions-it all sounds so complicated.

These Easy Salmon Foil Packets are incredibly simple.  Just rub the fish with sauce, top it with garlic and green beans, and bake. In fact, it’s so easy, even my daughters can cook it (well, with a little help from Mom). See?

So this meal is actually a three-fer: it’s easy, it’s healthy, and it’s a good way to get the kids involved in the kitchen. And what kids help cook, they’re a lot more likely to eat.
I was actually worried that my youngest wouldn’t like the dish, since she has turned her nose up at salmon a couple times. But after getting to help “paint the fish” with the sauce and assemble her own yummy packet, she ended up loving it.)

Easy Salmon Foil Packets
- 1.5 lbs salmon ( divided into 4 )
- 2 Tablespoons soy sauce
- 2 teaspoons honey
- 1 Tablespoon of lime juice (about 1 lime’s worth)
- 10 oz frozen green beans (fresh would also work)
- 1 clove of garlic, thinly sliced
- salt/pepper to taste
- 1 Tablespoon of butter, divided into 4 tabs
- Preheat oven to 400 F degrees.
- In a small bowl, mix together soy sauce and honey. Â Divided salmon among 4 sheets of foil. Place a salmon filet in the center of each sheet of foil. Â Brush each filet evenly with soy mixture.

- Squeeze lime juice over each filet, and season with a pinch of salt/pepper. Â Divided and place green beans and garlic slices on top of each filet. Â Season beans with salt/pepper to taste and top with a tab of butter.
- Seal foil packets and place on a baking sheet. Bake to 16-20 minutes, until salmon is flaky.
