Ah, grilled cheese. It’s a classic comfort food we all remember from childhood. That warm, gooey cheese spilling out from between two beautifully browned slices of bread was like a hug from Mom on a plate.
Now, maybe you think of grilled cheese as a kids’ meal, and you think it’s not appropriate for an adult lunchbox. But I say phooey to that. Just like peanut butter and jelly, this childhood classic is too good to give up just because you’re a grown-up.
Okay, you may be thinking, but Mom always used to serve grilled cheese sandwiches with tomato soup. You can’t put that in a lunchbox – can you?

I like this idea. For work, I take the soup in an insulated container because I like it hot. I make little grilled cheese croutons for the soup. (It is just the grilled cheese sandwich cut into small pieces.) I like your idea of adding the pickles
