Lemon Grilled Chicken Kabobs
Grilling season is here! And for a change of pace from plain old hamburgers and hot dogs, I thought I’d try cooking up something a little lighter. Something with less meat, more veggies…but of course, plenty of flavor.
Now, chicken is always a great choice for a lighter meal, but whole pieces of chicken just take too long to cook on the grill. So I decided to cut up my chicken into smaller chunks that can cook up quickly on skewers. And once I’d done that, it was an easy call to stack some veggie chunks on there with the meat – halved mushrooms, cherry tomatoes, and half-coins of zucchini.
All this was nice and light and healthy, but it was just a little…plain. So I came up with a zesty lemon marinade – literally zesty, because it’s made with lemon zest and juice, as well as olive oil, garlic, and dill. Let the chicken and the veggies all steep in that while you fire up the grill, and your little skewers will come off the flame bursting with flavor.
Serve these Lemon Grilled Chicken Kabobs up with a side of rice or salad (or both), and you’ve got a light, tasty meal that’s perfect for summer.

Lemon Grilled Chicken Kabobs
Ingredients:
2 chicken breast, cut into approximately 16 small chunks
1 zucchini, cut into half coins
8 mushrooms, cleaned and cut in half
10 cherry tomatoes
1 lemon, zested and juiced
4 Tablespoons olive oil
2 teaspoons garlic, minced
1 Tablespoons dill, fresh
1/2 teaspoon salt
1/4 teaspoon pepper
(plus extra salt and pepper for seasoning chicken breasts)
NOTE: If using wooden skewers, begin by soaking them in a sink of water 30 minutes before cooking.
Directions:
1. In a small bowl, combine the olive oil, lemon juice, lemon zest, garlic, fresh dill, and salt and pepper.
2. Season the chicken with salt and pepper to taste. Next add HALF the lemon marinade to the bowl and mix to coat the chicken well. Set aside.
3. Combine the zucchini, mushrooms and cherry tomatoes in a bowl. Add the remaining lemon marinade and coat to mix.
4. Take one skewer, and put approximately 2 pieces of zucchini, 1 tomato, 1 mushroom and 2 pieces of chicken on the skewer. (These amount will vary, depending on how small or large you cut up your ingredients.)
5. Preheat the grill to approximately 350 degrees. Lay the skewers on the grill. Grill them for approximately 4 minutes on each side. Remove and let rest for 2 – 3 minutes.
