Sometimes I think it’s too bad that Christmas comes right at the beginning of winter, instead of in the middle. After six or seven weeks of dark, dreary winter weather, we could all really use a holiday to cheer us up.

Fortunately, there is one holiday that comes right in the middle of winter when you need it: Mardi Gras! It doesn’t get celebrated that much up north, but down south where we live now, it’s a pretty big deal. And why not? On a mucky February day, a big party with lots of color and costumes and music is just what the doctor ordered.

So if you’re stuck up north and sick of winter, I suggest you throw your own little Mardi Gras party to brighten things up. Here’s a cheery little recipe to get you started: Mardi Gras Snack Mix. It’s like a Mardi Gras parade in a bowl – a mix of bright colors and sweet and salty flavors.

By the way, this recipe calls for Muddy Buddies, which is a sort of sweet Chex mix made with melted chocolate and peanut butter. You can buy these ready-made at some stores, but if you can’t find them, it’s not that hard to make your own. I’ve tacked on a recipe for them at the end.

Mardi Gras Snack Mix

Ingredients: 
4 cups Chocolate Rice Chex
5 cups Muddy Buddies (use store bought or recipe below)
1/2 cup purple and green M&M’s
16 pretzel squares
8 Wilton purple chocolate melts
8 Wilton lime green chocolate melts
Chocolate sunflower seeds -purple green and yellow
Mini BreadSticks (like the kind that comes with Nutella)

  1. Line a baking sheet with waxed paper. Set aside. Place 8 pretzel squares on a microwave safe plate and microwave for 20 seconds to warm the pretzels. Place the 8 purple melts in the middle of each warm pretzel and microwave for an additional 20-30 seconds until the chocolate melt is soft.
  2. Let cool on the baking sheet for at least 5 minutes. Repeat steps 2-4 using the green chocolate melts.
  3. In a large mixing bowl, add the chocolate Chex cereal, muddy buddies recipe below), purple and green pretzels and Nutella sticks. Toss to mix. Sprinkle the M&M’s and sunflower seeds on top.

INGREDIENTS FOR HOMEMADE MUDDY BUDDIES

9 cups Rice Chex cereal
1 cup semi-sweet chocolate chips
1/2 cup smooth peanut butter
1/4 cup butter (1/2 stick) – room temperature
1 teaspoon vanilla extract
1 1/2 cups powdered sugar

  1. Place the Rice Chex cereal in a large mixing bowl and set aside.
  2. In a medium microwaveable bowl, add the chocolate chips, peanut butter and butter. Microwave for 1 minute and stir. Microwave for an additional 30 seconds until smooth.
  3. Add the vanilla and stir to incorporate.
  4. Pour mixture over the cereal and stir to get all of the pieces covered. Transfer the cereal into a large Ziploc bag (one gallon or larger).
  5. Pour the powdered sugar into the bag and seal it. Gently shake the bag until all of the cereal pieces are evenly coated with the powdered sugar.
  6. Line a baking sheet with wax paper. Carefully, pour out the cereal onto the baking sheet and spread out to cool.
  7. Once cooled, add to the above Mardi Gras recipe.

  2. How far in advance can I make this terrific sounding recipe if I keep it in an airtight container?

    1. For best taste, I would say 3 or 4 days in advance.
