Fried chicken, the easy way.
I have kind of a love-hate relationship with fried chicken. I love the taste of it. I love the crunch of the crispy, seasoned skin over tender, juicy meat. But I hate all the work and mess that goes into making it. And I’m not that crazy about all the oil that it soaks up to get that delicious coating.
So I’ve found a way to lighten up this recipe, and make it a lot easier at the same time. The key is to let the oven do the work. So instead of battering and frying each piece, one by one, you just bread all the pieces and load them onto a baking sheet. Then they can bake all at once.
Okay, you ask, but what about the breading? Doesn’t that take a lot of time? Not really, because the other key to this recipe is panko bread crumbs. These fine, flaky crumbs give a piece of chicken an even coating in no time. Just dip it in egg, then pop it into a Ziploc bag filled with the crumbs and some yummy seasonings. Give it a good shake, and it’s ready for the oven.
This Parmesan Oven Fried Chicken has all the flavor and crunch of the original, with a lot less work. And your waistline will thank you, too.
Parmesan Oven Fried Chicken
Ingredients you will need:
pieces of chicken, (Chicken legs and thighs)
Parmesan Cheese
eggs
Seasoned Bread Crumbs
Panko Bread Crumbs
Garlic Powder
Salt and Pepper
Olive Oil
- Preheat oven to 350 degrees F. Line a baking pan with parchment paper or foil (just for easy clean up).
- Combine the parmesan cheese, panko and seasoned bread crumbs. Mix well. Add salt, pepper and garlic to the bread crumb mixture. Place in a ziplock bag.
- In a shallow bowl, break the two eggs and whisk together to combine.Take each piece of chicken separately, and pat dry. Coat chicken in egg mixture and drop into the bag of breading.
- Close the top and shake it until the chicken is well coated. Place on the baking sheet.
- After each piece is coated, drizzle each piece of chicken with ½ tbsp of olive oil, and then bake in the oven for 40 – 45 minutes or until the juices run clear. Remove from the oven and let rest for 5 minutes before serving.

Tried this and was very good. I think I added to much oil though, will cut back more next time. Also mine took around 55 minutes to cook at 350, then moved up to 375

Looks delicious! Just curious… Is there a typo though with regards to the olive oil? Do you mean drizzle each piece of chicken with 1/2 tablespoon of oil? It states to use only a 1/2 tsp each, but then that would not use up all of the 4 TBSP oil listed in the ingredient list. Just want to check before I make this. Thank you!

Could this been done with chicken breast instead and would that change the cook time

I live alone and think this would be a Lot of fafffor one or at most two pieces of chicken, would it be ok to do a batch and freeze some.
