Tik Tok Famous Taco Quesadillas
I’ve been cooking for quite a few years now, but I’m still learning new tricks all the time. Just this week, for instance, I picked up a new quesadilla technique from TikTok.
It’s a nifty folded quesadilla, with layers of tortilla and filling all stacked on top of each other so you get each ingredient in every bite.
I tried this first with a breakfast quesadilla, (recipe coming soon!) and it was so neat, I just had to try more versions. So I tried to think of a quesadilla recipe I hadn’t done before – which wasn’t easy, since I’ve tried so many – and I finally thought, aha! Why not double down on the Mexican theme and make a quesadilla with my favorite taco fillings?

And here it is: the Tik Tok Famous Taco Quesadillas. Each quadrant of the tortilla holds a different taco ingredient – spiced ground beef, refried beans, mashed avocado, and shredded cheddar/jack cheese – all folded up together and browned in a pan.
This creates a neat little handheld package you can eat just like a taco, but with all the oozy melted-cheese goodness of a quesadilla. It’s the best of these two great Mexican dishes in one.
Tik Tok Famous Taco Quesadillas
- Place a flour tortilla flat on the workspace. Use a sharp knife or kitchen shears to cut a single line from the center to the edge of the tortilla. Rotate the tortilla, if needed, so that the cut line is pointed straight down.
- Imagine the tortilla divided into four quadrants – the first quadrant being the one directly to the left of the cut, and then moving clockwise to quadrant 2, 3, and 4.
- In quadrant 1, spread about 1⁄4 cup of refried beans to cover the area of the quadrant.
- In quadrant 2, place 1⁄4 cup of the taco meat (meat should cover the full quadrant in a single layer).
- In quadrant 3, place 1⁄4 of the avocado, lightly mashed.
- In the final quadrant (to the right of the slice line), sprinkle 1⁄4-1⁄2 cup of cheese.
- To fold up the quesadilla, flip quadrant 1 up on to quadrant 2. Because the beans are on quadrant one, they won’t spill out as you fold it up.
- Continue folding the quesadilla in a clockwise direction until it is folded into a compact triangle.
- In a medium saucepan, melt a dab of the butter over medium heat. Use a spatula to scoop under the folded quesadilla and lift it gently into the pan, being careful not to let the cheese spill out. (The cheese will be on the bottom layer of the folded quesadilla.)
- Cook the quesadilla over medium or medium-low heat until the quesadilla is browned and the cheese is melty.
- Flip the quesadilla (either add a bit more butter to the pan or spread a bit of butter on to the side that is face up before you flip it over).
- Continue cooking until the quesadilla is browned on both sides. Repeat these steps to cook the remaining quesadillas.
Recipe Tips!
- If you have a large saute pan, you can certainly cook more than one quesadilla at a time. Prepare them all at once and cook however many at a time that will fit in the pan.
- Monitor the heat in the pan so that the tortilla does not burn before the cheese melts. It is important to have the cheese in that fourth quadrant so that 1) the cheese is one of the “outer” layers and melts during cooking, and 2) the cheese layer is on the bottom so that it is first to cook and less likely to spill from the folded quesadilla during folding or cooking/flipping.

- 1 cup refried beans
- 1-2 cups grated jack/cheddar cheese
- 1 large avocado
- 4 burrito-size flour tortillas room temperature
- 2-3 tablespoons salted butter or vegetable oil

This looks so delicious! Is there a particular reason for the order ingredients are placed. Seems like the avocado should end up in the middle so that it remains the coolest.
The easy of folding. It’s hard to fold over the ingredients that don’t stay put 🙂

Could I use packaged shredded Mexican cheese? Or is shredded block of Monterey Jack best?
