I had a couple of ranch packets leftover from the Cool Ranch Crockpot Chicken Tacos or Tostadas I made last week, and wanted to make something my potato and cheese loving husband would enjoy.

After a short brainstorming session, this Creamy Ranch Crockpot Potatoes were born. YUM! There were NO LEFTOVERS between the four of us. I will remember to make a double batch next time 🙂

Creamy Ranch Crockpot Potatoes

  1. Quarter potatoes into bite-sized pieces.red potatoes cut up in a mixing bowl
  2. Mix together, ranch packet, cream cheese, water and potato soup.
  3. Add potatoes and mix until all potatoes are nicely coated.
  4. Pour into crockpot.Set the crockpot to LOW and cook covered for 5 – 6 hours or HIGH 3 – 4 hours. (It all depends on your crockpot. Mine runs hot, so I cooked on low for about 5 hours.)  I did stir once to prevent burning on the edges.

Creamy Ranch Crockpot Potatoes

Ingredients
 

  • 2 lbs of small red potatoes
  • 1 can of cream of potato soup
  • 1 8oz brick of cream cheese, softened
  • 1 ranch seasoning packet
  • 1/2 cup of water

Instructions

  • Quarter potatoes into bite sized pieces.
  • Mix together, ranch packet, cream cheese, water and potato soup.
  • Add potatoes and mix until all potatoes are nicely coated.
  • Pour into crockpot
  • Set the crockpot to LOW and cook covered for 5 – 6 hours or high 3 – 4 hours. (It all depends on your crockpot. Mine runs hot, so I cooked on low for about 5 hours.) I did stir once to prevent burning on the edges.

      so i just used cram of chicken and also stuck chicken in it if yoiu dont mind me asking how did yours turn out using cream of chicken

  6. I’m going to double the batch and add four chicken breasts! I wonder if it will cause any issues if I use russet potatoes instead of baby reds.. they had a sale .98c for a 5lb bag of the russets!

      Decided to just stop and pick up the baby reds, tossed in three large chicken breasts (about 1 1/2 lbs) and basically doubled everything, near the end I shredded the chicken and added cooked bacon bits.

      So amazing! Well done!

    Can I put this together the night before stick in fridge and just put it on in the morning?

    1. I think that should work ok Rachel. The potatoes might brown just a little though.
