It’s the most peppermint time of the year….

Yes, the holidays are here, and that means it’s time for candy canes. You can hang them on the tree, slip them in a stocking…or best of all, put them into your holiday desserts. Especially chocolate desserts, because chocolate and mint together are a magical combination.

One of the yummiest ways to combine chocolate and peppermint is to make peppermint bark. This is basically a layer of melted chocolate (dark, white, or both) with crushed peppermint sprinkled on top. There’s only one problem with it: it’s not a cookie. 🙂

To fix that, I’ve turned peppermint bark into peppermint bars. These Peppermint Cookie Bars start with a sugar-cookie crust, baked in one solid layer until it’s golden brown. Then you poke holes in that crust – just like with a poke cake – and melt the chocolate on top, so it oozes right into the crust. And then for the finishing touch, you sprinkle the crushed candy on top.

Once it’s cool, you just slice it into bars, and presto! Holiday magic in a cookie.

 

Peppermint Cookie Bars

2 cups all purpose flour
1 cup granulated sugar
1/4 teaspoon of salt
1 cup or 2 sticks of butter, softened
1 large egg yolk at room temperature
1 teaspoon of vanilla extract
1 Cup of semi sweet chocolate chips
Handful of peppermint candies/ holiday m&ms and couple of candy canes, crushed

Directions:

1. Preheat oven to 350 F. Grease and line a 13 by 9 inch metal pan with parchment paper and keep aside.

2. Whisk the flour and salt in a bowl and keep aside. Using hand mixer, beat the butter and sugar in another bowl, till fluffy. Next beat in the egg yolk and vanilla extract. Add the flour mix little bit at a time and mix till it starts coming together.

3. Transfer the crumbly dough to the pan and spread and pat it down. Poke holes all over using a fork.

4. Bake for 25-26 minutes until the crust starts turning golden brown. Take the pan out of the oven and sprinkle the chocolate chips on it. Put the pan back in the oven for a minute to help the chocolate chips melt.

5. Spread the melted chocolate over the cookie layer using a spatula. Sprinkle the crushed peppermint candies. Let it cool down till the chocolate sets. Cut the cookie bar into desired shape.
