How to make ribs in the Instant Pot

My Instant Pot continues to amaze me. I can’t believe how quick it makes dishes that used to take all day.

Take these Instant Pot Baby Back Ribs, for instance. If you make these the traditional way, you have to let them roast in a slow oven for at least four hours. With the Instant Pot, you can cut that cooking time down to just 35 minutes.

Of course, 35 minutes isn’t much time to really soak up all the flavors of the seasoning. But you can get around this by seasoning the ribs ahead of time and letting them sit for several hours. So you still have to start them well ahead of time, but you don’t need to babysit them. Just season them in the morning, and at dinnertime, take them out and pop them in the pot.

After 35 minutes at high pressure, they’ll be nice and tender. For the finishing touch, take them out and brush them with your favorite barbecue sauce, then give them just a few minutes under the broiler to get a beautiful, crispy, caramelized coating.

And presto – perfect baby back ribs, with only a few minutes of actual work.

Instant Pot Baby Back Ribs

Ingredients:
1 ½ – 2 pounds baby back or pork side ribs
½ bell pepper, sliced
1 ½ scallion (green onion), sliced
2 teaspoons dried thyme
2 teaspoons garlic powder
as desired salt and pepper
1 cup water
as desired your favorite bbq sauce

Directions:

  1.  Cut the ribs into 3 – 4 rib clusters. Season with salt, pepper, garlic and thyme. You can either cook now, or seal in a ziplock bag and place in fridge for a couple hours or overnight.
  2. Place the trivet in the bottom of the instant pot insert. This is optional, but it’s nice to keep the ribs off the bottom of the pot, but not imperative. Add the water to the insert.   3. Place the top on the Instant Pot and shift toggle to “seal” position. Cook on manual high pressure for 35 minutes. After cooking time is complete, do a Natural Release.
  4. When the silver pin has dropped, open the lid and carefully remove the ribs to a broiling pan or cookie sheet.Instant Pot Baby Back Ribs - Cooked. ribs on baking sheet

Instant Pot Baby Back Ribs
