Pull Apart Cranberry Brie Bread Bowl
Suppose you’re going to an office party, and you’ve offered to bring an appetizer.
No problem, right? In five minutes, you can whip up any of a dozen dips, grab a box of crackers, and head out the door. Or, if you really want to impress the crowd, go for something a bit more elaborate, like my Pull Apart Pizza Bread or Honey Buffalo Crockpot Meatballs. It’s still easy.
But now suppose this year, your office party is a really fancy affair, held at a posh country club. And they’re still counting on you to bring the appetizer. Now what do you do?

I’ll tell you what you do: you buy yourself a wheel of brie, a round loaf of peasant bread, and a jar of cranberry sauce, and you put it all together to make this Pull Apart Cranberry Brie Bread Bowl.
This is a fancy finger food that fits right in even in the ritziest surroundings: brie cheese baked in crust, seasoned with fresh thyme, and topped with cranberry sauce and chopped nuts. You could serve this at a royal wedding, and no one would bat an eye. And because the bread and cranberry sauce are ready-made, it’s not hard to make at all.
Of course, you don’t have to tell anyone that.
Pull Apart Cranberry Brie Bread Bowl
Ingredients:
1 medium bread bowl (round loaf of rustic bread)
1 (12oz) wheel of brie
1/2 cup cranberry sauce
1 springs fresh thyme leaves
3 Tablespoons butter, melted
salt and pepper to taste
Optional topping: 1/4 cup walnuts roughly chopped
Directions:
1. Preheat oven to 350 degrees. Line a baking sheet with foil. Slice the top quarter off of the top of the bread off.
TIP: Use the brie wheel to measure the size of the hole, tracing with a knife.
2. Scoop out the bread. Cut slices around the edge of the bread about an inch apart, only cutting partially through to keep the bread in tact, creating pull apart “bread tabs.”
3. Brush the inside of the bread with melted butter.
4. Season with salt and pepper. Sprinkle with half of the fresh thyme.
5. Remove the top rind from the wheel of brie. Place the brie wheel in the hollowed out center of the bread. Spoon the cranberry sauce over the brie. Top with remaining thyme.
6. Replace the top of the bread and bake for about 15-20 minutes. Once cooking is done, sprinkle with optional hazelnuts or walnuts.
