Beef Tips with Peppers is an incredibly easy dish that’s full of rich meaty flavor.

The tender sirloin steak is cut up and seared in olive oil and butter in a hot skillet, after which the red wine vinegar is added to deglaze the pan, releasing the browned bits to create a nice sauce.

Recipe Notes:

  • The steak is seasoned with salt and pepper and cooked in olive oil and butter which I find enough for flavor. You can certainly season the steak with your favorite steak seasoning if you like. 
  • It’s important to make the skillet hot before adding the meat so that it sears, caramelizing the meat on the outside while leaving it juicy and tender inside. 
  • Fresh cloves of garlic, minced, will provide the best flavor. While this is an extra step, it’s totally worth it! 
HOW SHOULD I STORE BEEF TIPS WITH PEPPERS?

Leftover beef tips with peppers can be stored in an airtight container in the fridge for 2-3 days. You can also freeze this dish for up to 1 month.

WHAT TYPE OF STEAK IS BEST FOR THIS DISH?

I prefer sirloin steak for this recipe but you can use another cut of beef that has good marbling throughout. Flank steak, New York steak, or rib-eye are great alternatives.

Avoid muscular cuts of meat like stew meat since there won’t be enough cooking time in this recipe to break down the tough texture.

You can always ask your local butcher for suggestions if you can’t source sirloin.

WHY DEGLAZE THE SKILLET?

Deglazing the skillet with red wine vinegar, red wine, beef stock, or apple cider vinegar helps to incorporate all the rich and meaty flavors from cooking the sirloin steak into the rest of the dish.

The acidity in the red wine vinegar helps to lift the browned bits in the pan to mix with the juice and fat to make a rich sauce. It makes a big difference in flavor!

WHAT VARIATIONS CAN I MAKE TO THIS RECIPE?

  • Change the color of the bell peppers to those you enjoy the most. 
  • Yellow onion or red onion will work just as well as the white onion I’ve used in this recipe. 
  • Add mushrooms to this dish. There’s no denying that mushrooms and steak go together like peanut butter and jelly!
  • Red wine, beef stock, or another type of vinegar can be used to deglaze the skillet. 
  • Make an Asian-inpired beef tips dish by using ingredients such as coconut aminos, sesame oil, and fresh ginger.
  • Make a Mexican-inspired beef tips dish by using ingredients such as ground cumin, chili powder, paprika, oregano, and a squeeze of fresh lime juice.

  1. Set out steak at least 30 minutes before cooking to bring them to room temperature.  Cut into bite-size pieces and sprinkle with salt and pepper. steak bites in a pan
  2. In a cast iron skillet, heat olive oil and butter over medium heat until the skillet is hot.  Add meat pieces, working in batches to avoid overcrowding, and sear on medium-high heat. Toss just enough to sear on all sides and then remove from the skillet. browned beef tips in pan
  3. Add the red wine vinegar to the skillet to deglaze the pan. Add the Worcestershire sauce and simmer for 30 seconds to reduce the sauce. stirring sauce in pan

  • 2 pounds top sirloin steak cut into pieces
  • 3 tablespoons salted butter
  • 1 tablespoon olive oil
  • Salt and pepper
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 3 cloves minced garlic
  • 3 bell peppers chopped
  • 1 white onion chopped
  • Fresh parsley or preferred herbs for garnish
