Is mirin necessary?

Mirin adds a slightly sweet flavor that complements the rice vinegar and sesame oil. If needed, you can substitute a small amount of rice wine vinegar mixed with a pinch of sugar.

Can I make this ahead of time?

You can prepare the cucumbers and dressing ahead of time. Add the avocado flesh just before serving to prevent browning.

Can I use regular cucumbers?

You can, but thin-skinned varieties such as english cucumbers or persian cucumbers work best because they have fewer seeds and a better texture.

Notes

Use seedless cucumbers for this recipe. The miniature english cucumbers are a great size. The longer the cucumbers can sit in salt, the crispier they will be and the dressing won’t make them soggy.
Mirin is like a slightly sweeter soy sauce. This dressing has great tang and a little kick with the red pepper flakes.
