How to make Chicken Noodle Soup In the Slow Cooker

As you know, I LOVE SOUP! And what I love even more is soup that I can cook in the crockpot.  Yes it takes longer, but I’m a set-it and forget-it kinda gal.

After posting my 25 Comforting  Crockpot Soups post, I had SEVERAL emails requesting a crockpot chicken noodle soup. Well, I listened, and here it is my friends!

The Best Crockpot Chicken Noodle Soup

NOTE: In the comments, you will see that a few people have reported their noodle disintegrating after adding them to the crockpot. I have no idea why this is happening, and have NEVER had that happen any of the times we have made this soup. BUT, I have only used No Yoke brand noodles. Other people have also reported success with No Yoke Noodles and Walmart Generic brand noodles. If you do not have access to those brands of noodles and are concerned, you can also just boil your noodle separately.

Directions

  1. In a 6 quart crockpot place whole chicken breasts on the bottom and top with , carrots, onion, celery, garlic, olive oil, thyme and bay leaf.

  2. Next add in chicken broth, water, and season with salt and pepper to taste. I used 1/2 teaspoon salt & 1/4 teaspoon pepper.
    Cover and cook on low heat 6 – 7 hours.

  3. Remove cooked chicken breasts and cut into bite sized pieces. Place chicken back in to the crockpot. Now add in egg noodles and parsley.
    Cover and cook just until noodles are tender, 5-10 minutes.

  4. Enjoy with your favorite crackers!

Ingredients
 

  • 1 1/2 lbs boneless skinless chicken breasts
  • 2 cups carrots peeled and chopped
  • 1 medium yellow onion diced
  • 3 stalks celery chopped
  • 3-4 cloves garlic minced
  • 3 Tablespoons extra virgin olive oil
  • 1/2 teaspoon dried thyme
  • 1 bay leaves
  • 6 cups chicken broth use my EASY homemade broth or low-sodium
  • 1 cup water
  • Salt and freshly ground black pepper to taste (I used 1/2 teaspoon salt & 1/4 teaspoon pepper)
  • 2 cups uncooked wide egg noodles
  • 3 Tablespoons chopped fresh parsley

    I made this soup a year ago and loved it! I panicked when I couldn’t find this recipe again at first. I found it and it’s in the crock pot now. Saving this recipe so I don’t lose it again. I followed the recipe except added more no yolks extra broad egg noodles for a more chunkier soup. Yummy!

    Hello, I think there is a mistake in the recipe. It calls for 3 celery stalks, and that is way too much celery. i would say it is an excessive amount of celery. When i did this soup, I added 1 celery stalk and even then it was too much celery. I THINK, you meant 3 celery sticks/ ribs? because then it would be more reasonable.
    hopefully this comment will help others, I made it a second time with LESS than 1 celery stalk and it was DELICIOUS.

    Just wanted to share in case someone wants to make it in 2017.

    1. We always called them stalks Johana. But yes, 3 ribs. I’ll make a note of that in the recipe for other who are confused 🙂 I am so happy you loved it!

    I was looking for an easy soup to make for my Grandma’s lunchtime visit, because I didn’t want to serve canned soup.. and all of the other recipes I found took a LOT of work! I didn’t have the time!! So I was delighted to find this recipe! I decided to prepare (chop!) the ingredients the day before and then I added everything except the noodles & parsley to the crock pot right before bed so that the soup cooked overnight for 7 hours. I woke up to an amazing aroma 🙂 I left the slow cooker on warm all morning and made the noodles separately (since our meal was lunch). The No Yoke brand of noodles was great! The soup turned out spectacularly! Everyone liked it and I was thrilled to find such an easy recipe that tasted so good!! This was just perfect!

    1. You can Lauren. I recommend low, but on high I would cook it 4 hours.
