Cheesy Crockpot Cowboy Casserole

Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese

- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 can of diced tomatoes with liquid
- 1 cup canned corn drained
- 1 can dark red kidney beans drained
- 1 cup of shredded cheddar cheese

Thanks because I will add my can of condensed cream of mushroom soup now then 🙂 My grocer sells those mega cans that are about 150% of a typical soup can, so just guessing the regular soup can size is the one you suggest. It should start getting fragrant in another hour or so, will add more then if needed.
I am cooking this in my crockpot right now, my husband and three boys love mince in anything – I think this may be one of their favourites! It’s quite cool here in Scotland so this will warm us up! btw I used Knorr Aromat for the spice!

Our family (from south Jersey) also makes a ship wreck stew, though it’s not that similar. But from what I’ve been told, it was the stew thrown together from what was on hand for those that were on the wrecked ship, so there are tons of variations!
This was just delicious! I had to use russet potatoes since that’s all I had, but no problem. It’s just my husband and I so This will be lunch tomorrow as well. Thank you for posting it and we’ll definitely be adding this to the rotation 😀
