Let me tell you about my friend, Coach Dom. He’s a brilliant trainer, and he’s also an awesome cook. And his biggest hit recipe is an appetizer called Cheesy Sausage Spinach Bread. He makes it for all his family gatherings, and people ask for it time and time again.

Cheesy Sausage Spinach Bread is a loaf of bread stuffed with pork sausage, spinach, and two kinds of cheese, all seasoned with garlic and pepper. It’s kind of like a big calzone. It’s made with frozen bread dough, so there’s no need to go through all the steps of making dough and letting it rise and punching it down and so on. The recipe says “pork sausage,” but what kind?

You’re looking for fresh sausage, the kind that comes in a tube rather than in pre-formed patties or links. Like Jimmy Dean.

OK, but which variety? Regular, hot, Italian?

A: That’s up to you! Just about any variety of sausage will blend well with the spinach and cheese in this bread, so you can decide whether you want yours to have a more Italian flavor, hot and spicy, or just your basic pork sausage. The only kind I might steer clear of is maple flavor – that would be a little weird.

Is there a vegetarian sausage that would work in this bread?

A: Yep! Try Lightlife’s Gimme Lean plant-based sausage. It comes in a 14-ounce tube, which a little less than the recipe calls for, so you can either use a whole tube plus a little more or just one tube for a bread that’s slightly lighter on the sausage. How to Make Cheesy Sausage Spinach Bread

  1. Preheat oven to 375. In a large saute pan brown your ground pork until no longer pink, drain and add to a bowl.
    Add in your spinach and stir together so spinach flakes apart. Add in your garlic powder, pepper and cheeses and mix, set aside.Cheesy Sausage Spinach Bread - mixing ingredients in a large mixing bowl

On a flour surface roll each of your bread dough out into an 8″x14″ rectangle, sprinkle half of your sausage mixture onto top of bread, but not all the way to the edge, roll your bread up jelly roll style and pinch edges together, repeat with other bread loaf.Cheesy Sausage Spinach Bread - dough rolled out and with sausage mixture spread on top

Cheesy Sausage Spinach Bread

Cheesy Sausage Spinach Bread is a loaf of bread stuffed with pork sausage, spinach, and two kinds of cheese, all seasoned with garlic and pepper.

Cook Time 40 minutes

Ingredients
 

  • 2 loaves frozen bread dough defrosted
  • 1 lb pork sausage defrosted
  • 10 oz pkg frozen spinach thawed and drained
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 cup mozzarella cheese
  • 1 cup parmesan cheese

Instructions

  • Preheat oven to 375. In a large saute pan brown your ground pork until no longer pink, drain and add to a bowl.
  • Add in your spinach and stir together so spinach flakes apart. Add in your garlic powder, pepper and cheeses and mix, set aside.

    I am not a fan of sausage. Is there something else I could use meat wise?

    1. Shredded chicken, or a lean beef seasoned with you favorite spices would also work well.
