I’m about to ask you a very tough question. Ready? Here goes: Which is better, chocolate chip cookies or brownies?
It’s a poser, isn’t it? On the one hand, you have a golden, buttery cookie punctuated by little pops of chocolate, melting ever so slightly in the warm dough. And on the other hand, you have a rich, fudgy bar cookie packed with chocolate flavor through and through. How can you possibly choose?

These Brookies (short for “brownie cookies”) combine these two unbeatable desserts in one. Each brookie has a scoop each of chocolate chip cookie dough and fudge brownie dough, rolled together into one big, beautiful, fabulous chocolate treat.
Now, brookies are a little bit more work to make than either chocolate chip cookies or brownies alone. You have to mix up two different kinds of cookie dough, scoop out a spoonful of each kind for each cookie, and roll them together. But all you need is one look at those magnificent half-brownie, half-cookie delights to see that it will definitely be worth the effort.
My brookies came out all messy and mushed together. How can I get them to come out with two neat, separate halves like yours?
- First of all, don’t overfill the dough scoop. Take just a half-full scoop of each kind, so you’ll have two hemispheres you can fit together into a ball. Don’t squeeze the ball too much – just roll it gently between your hands to smooth out the edges. Then put it on the cookie sheet so the dividing line between the cookie and brownie sides is facing up, and gently flatten it out.
It seems like it would be easier to put both kinds of dough in one pan and make bars instead. Would that work?
- Sure, just alternate scoops of cookie and brownie dough in a lightly greased baking pan. Make sure to keep all scoops about the same size and distribute them evenly across the whole surface. Swirl a knife through the pan to combine them well before baking. It’s a little harder to tell when the bar-type cookies are fully baked, so test them frequently with a toothpick and pull them out as soon as it comes out clean. They won’t look quite as gorgeous as the individual cookies, but they’ll still taste awesome!
What can I do with the leftover chocolate chip cookie dough?
- Leftover cookie dough freezes beautifully. Just wrap it securely in plastic wrap and pop it in the freezer, and you can pull it out and bake it next time you need a quick cookie fix. (Or, if that’s too much trouble, just avoid the issue by halving the cookie dough recipe.)
How to Make Cookie Brownies Brookies
- Preheat oven to 350 degrees F. In a large mixing bowl, mix the melted butter, cocoa powder, brown sugar and granulated sugar. Add your egg, egg yolk and vanilla and stir till glossy.
- In another mixing bowl combine your all purpose flour, baking powder and salt. Slowly combine to the brownie mixture. Refrigerate while you prepare the chocolate chip cookie dough.
- In a stand or electric mixer cream butter and sugars until well combined. Add in eggs and vanilla until well combined.
- In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined.
- Using a cookie scoop, scoop out one of each brownie and chocolate chip cookie.
- Roll the two doughs together and then press it down so that you can see half of the chocolate chip cookie and half brownie. Place it on a baking sheet lined with parchment paper. Bake cookies for 10 minutes or until cookies are baked to your liking.
- Let cool for 5 minutes before transferring to cooling rack.

Brownie Batter
- 1/2 cup unsalted butter melted
- 1/3 cup of packed brown sugar
- 2/3 of granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tsp vanilla
- 1 1/4 cup of all purpose flour
- 1/2 cup of unsweetened natural cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
Cookie Dough
- 2 sticks softened butter
- ¾ Cup packed light brown sugar
- 1 Cup granulated sugar
- 2 large eggs
- 1 Tablespoon pure vanilla
- 3½ Cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 10 oz bag chocolate chips
