 The intention was to have these posted for you in time for Cinco de Mayo, but life got crazy busy. Oh well, a couple days late, but they are worth the wait!

This recipe really should be called Cool Ranch Crockpot Chicken Tostadas, Tacos, Burritos, Nachos, etc … You can add this yummy shredded chicken to just about anything. I am excited to throw some of the leftovers on my salad tonight.

The combo of ranch & taco spices really reminded me of Cool Ranch Doritos…. hence the name. I must say, this is one of my easiest crockpot recipes. Four ingredients, in the crockpot, and push go! Cool Ranch Crockpot Chicken Tacos or Tostadas

  1.  Put chicken breasts, taco & ranch mixes and chicken broth in crock pot.
  2. Set crock pot on low for 5 hours.
  3. After 5 hours, shred chicken with 2 forks.
  4. Replace lid and continue cooking on low for 30 more minutes.
  5. Serve shredded chicken on a tostadas, tacos burritos or salad, with your favorite toppings!woman holding a tostada

Ingredients
 

  • 4 chicken breast about 1 1/2 lbs
  • 1 packet of taco seasoning
  • 1 packet of ranch dressing
  • 14 ounces of chicken broth

Instructions

  • Put chicken breasts, taco & ranch mixes and chicken broth in crock pot.
  • Set crock pot on low for 5 hours.

  1. I’m looking to cook this tonight. Any recommendations on how much ranch and taco seasoning to use, or just an entire packet?

    1. I used the entire packet. If you are watching your sodium levels or tend to be salt sensitive, maybe just about 3/4 of each pack. It really depends on your taste.

    I loved this as-is in some burritos a couple weeks ago, but what it really tasted like to me was a good starting spot for some interesting chili. So yesterday I put the same exact ingredients in my crockpot, and added a can of tomato sauce, a full jar of green chili salsa, a chopped onion, two cans of dark red kidney beans, and some minced garlic. I shreddred the chicken after a few hours and returned it to the pot and let it simmer for a long time. It turned out to be the best chicken-based chili I’ve ever eaten!

    I made this for dinner last night and it was so very good! My husband ate 4 soft shell tacos over the course of last night. The only thing I did differently was I added about 3/4 of a can of black beans and 1/2 a can of corn. Mine can’t out a little soupy so I added a handful of minute rice to help absorbe some of the extra liquid. Hardly had any leftovers and I’m sure what is left over will be gone before the end of today. Thank you and I’ll definitely be making this again.

    I love this recipe! I made a few modifications, and I wanted to share in case it may help others.

    I use 8 chicken breasts, one packet of taco seasoning, one packet of ranch, two cans of Rotel, and two finely diced fresh jalopenos. I add no additional liquid (the Rotel has just enough). At the end of the cooking time, the chicken is swimming in juices.

    I then remove all of the chicken and tomatoes with a slotted spoon, shred, and then serve for crunchy tacos.

    My husband RAVES about this meal, and asks me to make it often. I highly recommend!
