Creamy Crockpot Chicken Stuffing and Green Beans

This Creamy Crockpot Chicken Stuffing and Green Beans is the one-pot hotdish at its best. It has everything a good hotdish should have: meat, starch, and veggie all in one pot, with no fancy or complicated ingredients. Just good, plain, solid comfort food.

And because it’s made in the crockpot, it literally takes only a few minutes to put it together. Just toss everything in the crock in the afternoon, and your dish is piping hot by suppertime. It’s all ready to pop in the car and take to the potluck-or to serve up right at your own table. Because that’s the wonderful thing about hotdish: it brings the cozy with it, no matter where it goes.
Creamy Crockpot Chicken Stuffing and Green Beans
Ingredients
- 2 lbs (about 4 chicken breast)
- 1 (6oz) box of stuffing mix
- 1 (10.5 oz) can cream of chicken condensed soup
- 3/4 cup sour cream
- 1/3 cup water
- 10 oz bag frozen green beans
- salt and pepper to taste

- Prepare crockpot with cooking spray. Season chicken with salt/pepper and place in the bottom of a crockpot.

- Next, top chicken with 1 box of stuffing mix.

- In a separate bowl, mix together condensed soup, sour cream and water. Spread mixture over stuffing.

- Place green bean on top. Cover and cook on HIGH for 4 hours. If you need a longer cooking time, you can do LOW for 6 hours, but I recommend the high setting 🙂

My stuffing burnt. Did I do something wrong?
Hi! I’m wanting to make this recipe with 2 chicken breasts instead of 4. I’m new to cooking and was hoping you could give me an estimated time that it would take to cook in my crockpot. I know every crock pot is different but I have no idea how long to keep it in there. Any idea how long it would cook on low and on high? I was going to keep everything else about the recipe the same, just less chicken. I would really appreciate it! Can’t wait to try this!

So I have a bit of an obsession with green bean casserole, which is immediately what I thought of when I saw this recipe. So I replaced the Cream of Chicken with Cream of Mushroom, changed the water to veggie stock (mostly because I just had some in the fridge I needed to get rid of), and added French fried onions on top of the soup mix and then a little more on top the green beans, and yum yum. Like thanksgiving in a pot.

I made this yesterday and it was so good! We substituted peas in for the beans though (kiddos preference). It stayed very moist but, by request, I had gravy on the side available and my daughter poured it right over the top. She said it was like a mini thanksgiving. If only Thanksgiving was this easy!!
TIP: Don’t stir the soup/sour cream mixture with the stuffing, just pour it in top. The stuffing ended up too broken down and mushy when it was stirred in.
I made this recipe today for lunch and it was a great hit at our house my husband loved it and so did my 10 year old son he said you have got to make this more often ???
