What can I say, I’m on a roll with my crockpot! This breakfast recipe is the BEST! You wanna know why?

Well, you put all the ingredients in before you go to bed, set your crockpot and wake up to a kitchen bursting with heavenly smells, and a warm, hearty meal. No fuss, just scoop onto a plate with a side of fresh fruit, and you have yourself a beautiful breakfast.

Here are my suggestions. When the casserole was done, I wish I had added a bit more salt and pepper. So my suggestion is to add salt and pepper to taste on each hash brown layer. Nothing crazy… just a pinch of each to season each layer. Go light, because you can always add more when you serve it.

Also, feel free to play around with the meats. Use bacon, sausage, ham…or heck.. ALL THREE! hehe. The vegetarian bacon I used was great and I can’t wait to try a sausage one next.

How to make Crockpot Breakfast Casserole

Ingredients 
1 dozen eggs
1 cup milk
2 lbs of hash brown potatoes. (you can use frozen hash browns, just cook for 8-9 hours, instead of the 7-8)
1 lb of bacon or veggie Morning Star bacon– cooked, drained and cut into pieces. (feel free to substitute with your favorite breakfast meat..sausage, ham, etc)
1/2 cup onions – diced
3 cups cheddar cheese – shredded
1/4 teaspoon dry mustard
1/4 teaspoon garlic powder
1 tsp salt & 1/2 tsp of pepper (I am recommending an additional pinch of salt and pepper for each layer of hash browns)  

Directions: 
  1. Beat 12 eggs until well blended.
  2. Next, beat in milk and garlic powder, mustard, 1 tsp salt, and 1/2 tsp pepper. Set aside.

  3. Layer potatoes (I suggest to season each potato layer to taste…..a small pinch of salt and pepper) and sprinkle 1/3 of the onions.
  4. Next sprinkle 1/3 of the bacon.
  5. Last but not least, top with 1 cup of cheese.

  6. Repeat this layering 2 more times to have a total of 3 layers….ending with cheese.
  7. Take your egg mixture and pour over layers. For refrigerated hash browns, cook for 6-7 hours on low. For frozen hash browns, cook for 7-8 hours on low or until eggs are set.

    Can you use one of the big 22 qt roaster pans with this just like double or triple the recipe? I’m looking at doing a breakfast for 30 to 40 people. Would the cook time be different too? Thank you for the great recipe

    1. I have never used a roaster pan for this recipe, but I am assuming it would work. Double up the recipe, but don’t double the time. Maybe add an hour to 2 hours. And check on it. I hope that helps!

    2. Did you ever get feedback on someone using a roaster pan? I have a large group to feed and that would be perfect.

    3. Good flavor but very dry. Would make again but will tweak the recipe by adding a little more milk or more eggs as some have previously suggested.

    I would love to make this for our church Easter breakfast……..do you think it would dry out if it was on low for 10 hours???

  3. I did make this for Easter breakfast. I have a crockpot with 3 settings, warm, low and high. I prepped it at 11:00pm, put it on low and at 2:30am the smell woke me up. 🙂 For fear of burning it, since it was my first time, I turned it down to the warm setting until my hubby got up at 6:30am, which I had him turn it back up to low. We did go to Church at 9:00am and returned to have this at 10:30am. WONDERFUL BREAKFAST!It DID NOT dry out. I have a VERY picky eater and he devoured this. I will be trying this with spinach and tomato on half for my hubby and I. Kids don’t care for veggies in their eggs. THANK YOU SO MUCH FOR POSTING THIS RECIPE!!!!!!

    2. I did this recipe again this past weekend, with sausage instead of bacon. Just as good!! I also added the spinach and tomatoes for mu hubby and I, it was WONDERFUL! I had a few leftovers and they warmed very well in the microwave the next morning. Thank you again for this recipe. My mom is also going to use it!

      I made this recipe for Christmas brunch and it was great. I did make some changes based on reviews posted. I added cooked mushrooms, cooked turkey sausage, and only one pound of hash browns which made the dish moist and flavorful. I think that doubling the potatoes may have taken away a lot of flavor for other reviewers. I also made sure to season each layer of potatoes with salt and pepper. I cooked it on low for 7 hours then turned it to warm for 2 more before eating it. It didn’t have as much color after only 7 hours as I like, but the remaining 2 on warm made it just right. I think if you like a casserole that isn’t as “crusty” (like when you bake it in a casserole dish in the oven), then you will enjoy this recipe and how easy it makes things the morning of.
