Crockpot Cheesy Chicken & Rice

Crockpot Cheesy Chicken & Rice

There is one word to describe this crockpot meal…. ADDICTING! The zest from the Zatarain rice, blended with the sweet corn and creamy cheese is AWESOME!

The girls loved it and asked for it again the next day. To add a twist to the leftovers, I sauted some baby spinach and then mixed in a serving of the Cheesy Chicken and Rice.

It added some green (which I love) and another dimension to the flavors. Hope you enjoy this easy family favorite!

So one you made this meal…could you suggest some sides for it? I mean you pretty much have everything you need, protein, grain, dairy and vegetables all in one. Thank you for any suggestions.

    1. We usually serve a side salad with this recipe. I think green beans would also be super yummy!

  2. Hi Corey!
I saw your recipe and thought this looked so yummy, however, I made it precisely with the measurements given and mine was so watery, almost like a soup. Even though it tasted good, I was wondering how yours turned out so thick? I would love to try it again if it turned out like your pictures because the flavors were good!

  3. Would the recipe still work with frozen chicken breast? would I just defrost the chicken first? and would it take longer to cook because its frozen?

  4. Planning on trying this tonight. Can the onions be tasted? Are they necessary? My kids aren’t fans, but if they can’t taste them then they are ok. Thanks!

    1. I would suggest dicing them very small. They pretty much disappear in the cooking process 🙂

  5. Making this today and was wondering if i am supposed to heat up the corn b4 i add it at the end also in ingredients says chicken stock and the recipe says broth .i only bought the chicken stock is there a difference

    1. No, you do not need to heat up the corn first.
