Easy Slow Cooker Taco Soup!
Many of my readers have requested more crockpot recipes. What can I say… I aim to please.
The idea behind the crockpot is to set it and forget it. I wanted the prep to be simple for this one… that is what crockpots are for, to make life EASY!
This hardy soup is just that. Chop an onion, open cans and dump in! I LOVE how easy this was to make. It would be a smart idea to keep the canned ingredients on hand, a couple frozen chicken breast in the freezer, and whip out this recipe when you can’t figure out what to make 🙂
Here are a few notes. To make this VEGETARIAN, just leave out the chicken and add a couple more cans of beans. I think dark kidney beans would be great or even chickpeas. BOOM, vegetarian! If you are worried about the beer, please don’t be. There was no beer taste in the final product. If it’s really an issue, just substitute with chicken or veggie broth, or even water.
And if you swap the beer for broth, this is also a Zero Point Weight Watchers Soup! Score!!
This soup would be awesome to make for a Super Bowl party. Just keep in in the crock on warm, serve in coffee mugs or small bowls… PERFECT!
Crockpot Chicken Taco Soup
Directions
- Place chopped onions, beans, corn, tomato sauce, tomatoes, and beer into the slow cooker. Mix well.
- Add taco seasoning and stir to mix together.
- Place chicken breasts into the mixture, pressing down until covered by mixture.
- Cook on LOW for 7 hours.
- Remove chicken from pot and shred with 2 forks.
- Stir back into crockpot.
- Serve soup with optional toppings or as is 🙂 DELISH!

Crockpot Chicken Taco Soup
Ingredients
- 1 chopped onion
- 12 oz bottle of beer can sub with broth...but I promise there will be no beer taste!
- 15 oz can of chili or pinto beans rinsed
- 15 oz can of black beans rinsed
- 15 oz can corn drained
- 8 oz can of tomato sauce
- 28 oz cans diced tomatoes undrained if you like some spice, use tomatoes with green chilies
- 1 oz packet of taco seasoning
- 3 boneless skinless chicken breasts
- Optional Toppings: shredded cheese and sour cream
Instructions

To make this a Zero Point Weight Watcher soup, sub broth for the beer.

Before I even saw this post, I made a VERY similar version that is passed around in our family.. hope it’s okay for me to post as an alternative! Delicious for sure! I was just shocked to see this variation featured on your website just after I made my today! 🙂
For ours, the recipe actually calls for ground beef, but since we don’t eat beef, we use ground chicken instead. You cook the 1 lb ground chicken (or beef if you’re into that sort of thing) with an onion and a clove or two of garlic if you want. Once it is all cooked, throw in the crock pot with 12oz bottle of beer (and I say NO subbing allowed on this ingredient.. it really does make the dish and you can’t taste the beer itself at all), 1 1/2 cups water, 2 cans of corn undrained, 1 can pinto beans (rinse/drain), 1 can black beans (rinse/drain), 2 cans of tomatoes with green chilies (we just use mild Rotel tomatoes and chilies and it is perfect on the spice), 1 packet of taco seasoning, and 1 packet of ranch dressing mix. Cover and cook on low until you are ready to eat. Sometimes mine only cooks for 3-4 hours.. other times, I throw it in early and it goes for 7-8. Since the meat is precooked, you could probably just leave it in long enough for the flavors to all come together. We serve ours with shredded cheese, a dollop of sour cream and some crushed tortilla chips! Fabulous!

It does not say what to do with the can of chili. im guessing you put that in like the rest of the ingredients?

For the ingredients, you use either pinto or chili beans. You add them in during step one where it says to add the beans. 🙂 I hope that helps Christina.

You say 2-3 chicken breasts. Do you mean chicken breast halves or full breasts? It’s tough to tell from the pictures and you didn’t give a weight. Thanks for the info.

The recipe was good but I didn’t love it. I added some cheese and avocado at the end for a bit more flavor. It is nice for a super quick dinner though. Comes together in seconds.
