Crockpot Detox Soup
Well, the holidays are over. Now all that’s left is the post-holiday guilt.

Let’s be honest, the holidays tend to be one long round of self-indulgence. We kick it off by stuffing ourselves with turkey and pie on Thanksgiving, spend all of December munching on cookies and sipping eggnog, and top it all off with perhaps just one too many glasses of champagne on New Year’s Eve. That leaves many of us starting off the new year with indigestion and a few extra pounds to lose.

This Crockpot Detox Soup is the perfect antidote. It’s got tons of veggies in a bright array of colors – carrots, onions, green beans, red kidney beans, tomatoes, cabbage, spinach, and celery – to pump your system full of all those vitamins it’s been missing out on. A couple of chicken breasts add some nice, lean protein with no extra fat to weigh you down.
This has everything your body needs without any of the junk you’ve been feeding it all through December. All it needs is a good whole-grain bread to make a complete, healthy meal.

How to Make Crockpot Detox Soup
- Place onions, carrots, green beans, cabbage, celery, and beans at the bottom of your crockpot.

- Top with chicken breasts. Add salt, pepper, garlic, bay leaf, and parsley. Pour in crushed tomatoes, beef broth, and water into the pot.

- Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours, or until vegetables are tender, and chicken is throughly cooked. Remove bay leaves. Remove chicken breasts from crockpot and shred with 2 forks.

- Place shredded meat back into the crockpot. Stir in baby spinach and cover. Continue cooking for 5 more mins, until spinach is cooked down.

Ingredients
- 1 medium onion diced
- 3 large carrots peeled and sliced into rounds
- 3 cups frozen green beans
- 4 cups of chopped cabbage about 1/2 a large head head of cabbage cored and chopped
- 1 cup diced celery
- 16 ounce can red kidney beans drained
- 1 lb boneless skinless chicken breasts
- 1.5 teaspoon salt
- 1/2 teaspoon pepper
- 2-3 teaspoons minced garlic
- 1 TB dried parsley
- 2 bay leaves
- 1 28oz can crushed tomatoes
- 4 cups beef broth
- 2 cups water
- 2 cups loosely packed fresh baby spinach.

Great soup. But I used Better than Bouillon Chicken base instead of the Beef brouth. When I was all finished cooking, I pureed the whole pot – until it was smooth. Made a great hot drink on a cold morning. Thanks for posting and it tasted great.
This was very, very tasty!!!! Loved that it was healthy but hearty with the chicken. I used one sleeve of Costco chicken breast, which was two nice sized breasts. Plenty. Will add more celery next time. Topped each bowl with freshly grated SHARP provolone cheese, Will make again! Could add corn as suggested. Thank you!
I avoid canned beans, are there any adjustments that can be made for uncooked beans?
I have only tested the recipe as written Joy, so I can’t say for sure.
Has anyone added black beans instead of kidney?
I think that would be a great substitution! Black beans would taste great!
Loved this soup! I used all the same ingredients except; I just did on the stove top with rotisserie chicken because I didn’t want to wait to eat it! 🙂 SO GOOD! I think I may double the recipe next time and maybe put in a few more of the beans, just my preference. Very versatile, but yummy just the way it is!
