How to make meatloaf in the crockpot!
Meatloaf is sort of the all-purpose, go-to dinner recipe. It doesn’t call for any complicated or expensive ingredients. It’s easy. And pretty much everyone likes it.
The only problem with meatloaf is the time it takes to make. First you have to mix up and shape the loaf, and then it needs about an hour in the oven. Not exactly a convenient meal for days when you’re going to be on the go right up until dinnertime.
The obvious solution for this problem? Make the meatloaf in the Crockpot! In fact, I went one better and found a way to cook the entire meal in the Crockpot – meatloaf, carrots, and potatoes, all at once.
It does take a little bit of time to assemble the meatloaf in the morning and load it into the slow cooker, with its backup band of carrots, taters, and a tangy tomato glaze. But once it’s all loaded up in the crock, you don’t have to do another thing – it just cooks on low, all by itself, while you’re out and about.
When you get home, your meat, veggies, and potatoes will all be cooked to perfection and ready to serve. So now, your go-to dinner recipe can be your come-home-to dinner recipe, too.
Easy Crockpot Meatloaf Dinner

DIRECTIONS:
- Prepare your crockpot with cooking spray. In a large bowl, mix together beef, bread crumbs, eggs, onion, garlic powder, parsley, salt, pepper, A1, ketchup and BBQ sauce. It is best to mix by hand to combine all ingredients.
- Form a loaf and place into the center of the slow cooker. Make sure the meat is not touching the edges.
- In a small bowl mix together topping ingredients. Brush on top of meatloaf so it it evenly coated.
- In a large bowl, combine carrots, potatoes, olive oil, garlic, salt and pepper. Toss until ingredients are well combined.
- Place veggies around the outer edges of your meat loaf. Cover and cook on LOW for 7-8 hours. Enjoy your Crockpot Meatloaf Dinner!

Easy Crockpot Meatloaf Dinner
Ingredients
- 2 lb extra lean ground beef
- 1/4 cup bread crumbs
- 2 eggs
- 1/4 cup diced onion
- 2 tsp garlic powder
- 1 TB dried parsly
- 1 tsp salt
- 1/2 tsp pepper
- 3 TB A1 sauce
- 1/4 cup ketchup
- 1/3 cup BBQ
Sauce Topping:
- 1/3 cup ketchup
- 2 TB Brown sugar
- 2 teaspoon Worcestershire sauce
Veggies:
- 2 cups baby carrots
- 3-4 cups small red potatoes
- 2 TB olive oil
- 1 TB minced garlic
- salt and pepper to taste

Hi . Love your site, but do not have or use a crockpot as my husband does not like meals cooked in them. So wondering if you use regular ovens too?

Crockpot would need to be at room temp before turning it on, otherwise it could crack the bowl.

I already mixed up the meatloaf and put in the crockpot with the potatoes. I then realized that I didn’t use the A1, ketchup and barbecue sauce. The directions didn’t say when to add it.

No, it shouldn’t mess up the meatloaf. If you have a hot running slow cooker, you might just have some well done areas where it is touching.

As stated in the ingredients, you want to make sure you are using extra lean beef to prevent the grease build up. I hope that helps.

I made this today for husband and father in law. The flavor was good, but very wet, (only 1/4 cup bread crumbs for 2lb beef) also cooking in a crock pot means it basically boiled it, so it just crumbled. With that being said, I will make it again, but in the oven

Amazing taste from all the sauces !!

I made this today, and we absolutely loved it!!! The only thing I changed was that I did not use the bar-b-que sauce. (My husband doesn’t like it) it was wonderful! When I got home, I just poured out most of the juice from the crockpot and popped it in the oven for 15 minutes at 400 degrees to brown everything, and it was perfect!!
