Easy Homemade Vegetable Soup
Having a hard time figuring out what to do with all those fresh vegetables popping up in your garden? Boy do I have a recipe for you!
This soup has been a family favorite since the girls were babies, eating finger foods 🙂 I love how many veggies are packed in this super simple soup. It is also a great one to freeze for a later date 🙂
PS… once the zucchini start popping up in my garden, I will be adding those to this recipe as well. So if you have some on hand, feel free to add some!

Easy Homemade Vegetable Soup
- In a large pot, cook carrots, onion, and garlic in oil for 5 minutes or until onion is tender.
- Add the potatoes and cook for and addition 3-5 minutes.
- Add broth, V8 juice, garbanzo beans, tomatoes, green beans, broccoli, Italian seasoning, and bay leaves. Bring to a boil.
- Reduce heat; simmer, uncovered, for 15-20 minutes.

Ingredients
- 32 oz vegetable or chicken broth
- 1 cup of chopped carrots
- 1 onion diced
- 1 large potato cubed
- 3 cloves of garlic minced
- 2 cups of frozen broccoli
- 2 cups of frozen green beans
- 1 can of garbanzo beans
- 1 can of diced tomatoes
- 3 cups of V8
- 2 or 3 bay leaves
- 1 tbsp Italian seasoning
- 2 tbsp olive oil.
