Firecracker Shrimp Quesadillas

Summer is the perfect time for seafood. In hot weather, no one’s in the mood for heavy stews and roasts. Lighter fare, like grilled fish or shrimp kabob, fits the season much better. And it makes a great complement for all those fresh veggies coming out of the garden.
One of the nice things about seafood is how versatile it is. It fits in perfectly at any gathering, from a casual cookout to a chic wedding reception. And there are dozens of different ways to cook it: on the grill, breaded and fried, on a skewer, in a salad…the possibilities are endless.

Here’s a little number I cooked up featuring SeaPak’s popcorn shrimp. These little delights are incredibly easy to work with. They come ready-breaded and frozen, so all they need is a quick dip in hot oil or ten minutes in the oven. And while they’re baking, you can use the time to whip up the creamy Sriracha sauce that gives this dish its special kick.
Then, once the shrimp are ready, just sandwich them between tortillas with a generous sprinkling of shredded cheese and fry them up until they’re nice and golden. Then all they need is a good drizzle with the creamy Sriracha sauce to turn them from just shrimp quesadilla into Firecracker Shrimp Quesadillas. You can even add a little extra Sriracha if you like a LOT of fire.
Firecracker Shrimp Quesadillas
- 4 large flour tortillas
- 4 servings of SeaPack popcorn shrimp
- 1 cup of shredded cheese
- 1/4 cup mayo
- 1 Tablespoons Sriracha
- 1 teaspoon lemon juice
- 1 Tablespoon honey
- Prepare popcorn shrimp according to package and set aside.
- In a small bowl, mix together, mayo, Sriracha sauce lemon juice and honey. Place shrimp in a medium bowl, and mix in 2 Tablespoons of the creamy Sriracha sauce, until shrimp are evenly coated.
- Heat a skillet to medium high heat. To make the quesadilla, layer 1/4 cup of cheese on one of the tortillas, topped with shrimp, another 1/4 cup of cheese, then place a tortilla on top.
- Cook in skillet until the bottom is golden browned and then flip the quesadilla. Continue to cook until the other side is golden brown and cheese is melted. Repeat steps for the second quesadilla. Cut into quarters and drizzle remaining creamy Sriracha sauce over the quesadilla and serve immediately. If you like some more KICK, feel free to also drizzle on some extra Sriracha sauce.

Saute fresh, peeled & deveined tail off shrimp in olive oil with mushrooms and any herbs you like. Squeeze a few teaspoons of lemon juice, toss and top with grated parmesan and fresh chopped basil. Serve over Angel Hair pasta. Easy, light and tasty. Perfect for summer!
