Freezer Friendly Breakfast Croissant Sandwiches
I don’t know who was the first person to come up with the idea of a breakfast sandwich, but boy, it sure was a stroke of genius. When you’re in a hurry, it’s easy to grab and munch on your way to work or school, or anywhere you’re going. And with eggs, bacon, and cheese all stuffed inside, it gives you plenty of fuel to get through the morning.
The problem with breakfast sandwiches is, though they’re quick to grab and eat, they’re not so quick to make. You have to fry the bacon, scramble the eggs, slice the buns, and assemble it all into sandwiches. In the time it takes to do all that, you could just sit down and eat a bowl of cereal.
The solution? Make your breakfast sandwiches ahead of time. I can whip up a batch of these Freezer Friendly Croissant Breakfast Sandwiches whenever I have half an hour to spare, then wrap them and pop them in the freezer. Then, on a busy morning, I can just grab one, unwrap it, give it a quick zap in the microwave, and hit the road.

How to Make Freezer Friendly Breakfast Croissant Sandwiches
Ingredient you will need:
- butter
- large eggs
- half and half (fat free is fine to use)
- Kosher salt and freshly ground black pepper, to taste
- small/medium croissants
- bacon, cooked
- sliced sharp cheddar cheese
- In a large skillet, melt butter over a low heat. Add eggs to the skillet and cook, whisking. Gently whisk in half and half; season with salt and pepper, to taste and continue to cook until eggs are cooked and set.
- Fill croissants with eggs, bacon and cheese to make 8 sandwiches.
- Enjoy now OR wrap tightly in plastic wrap or foil. Place bundles in freezer ziplock bags and place in the freezer.
- To reheat, remove plastic wrap or foil and wrap in a paper towel. Microwave for 1-2 minutes, or until heated through completely.

- 4 large eggs lightly beaten
- 1/4 cup half and half fat free is fine to use
- Kosher salt and freshly ground black pepper to taste
- 8 small croissants cuts in half horizontally
- 8 slices of bacon cooked
- 4 slices sharp cheddar cheese cut in half
